Picky lasagna eaters?

Today I made a lasagna. Now usually I have to make 2 separate ones. My boyfriend doesn't like cottage cheese and I just love it. So I only had to make one today since I forgot to buy cottage cheese. But I did get to sneak in some spinach into the sauce when he wasn't looking. I did forget to put the canned mushrooms in but it wont make to much of a difference.
What do you put in your lasagna? Do you use cottage cheese? Have you tried it with spinach? Do you have to make separate ones for different family members? Do your children eat lasagna?
It is a excellent way to get all kinds of vegetables into a picky persons diet. The way I do most of the vegies is shredding them. I shred the celery, carrots, then I chop the onions really fine, green peppers I cut as much as I can to keep them from being big chunks when you take a bite. You can add all kinds of things like spinach, mushrooms, different peppers, fresh tomatoes, garlic, cucumbers, herbs. I say if you cut it right and mix it in the sauce the flavors will be explosive in your mouth and picky eaters wont even notice.

I love lasagna! I agree with you putting vegetables in lasagna and in other menu is a great idea to make some picky person eats. Your lasagna is very healthy with lots of veggies! I sure know it taste great! Actually I do the shredding of veggies also for my little boy... Yes he loves lasagna too. Well he is not that picky eater, I am actually training him to eat well especially veggies.
When I cook lasagna, I am only preparing one kind and all of us enjoyed eating it together. We are not really picky, any kind of cheese will do whether it is cottage cheese, Mozzarella or other else.
Nice topic keelymcilwain! Now I am hungry and wanted to eat some lasagna!

Hi Keely. I haven't cooked lasagna yet but my boyfriend loves to order lasagna on fastfoods. I also love it but I really don't like veggies and herbs. Even though my boyfriend is telling me that I won't notice the taste of the herbs I still can't get myself to eat it. I pick out veggies or herbs. Then my boyfriend picks them and eat them. Haha. He's not picky at all and I love him for that. :P
p.s. Making separate/different types on a certain recipe is really tasking. :D

Wow cottage cheese? I have never tried that at all... usually I use ricotta and mozzarella cheeses. But there are actually several different ways of making lasagnas. I have used spinach in place of the usual ground beef (it's what I use sometimes with beef sausage) as I don't eat pork. Carrots is something I have just discovered goes well in lasagna. Of course the onions, peppers and fresh garlic.
When I make lasagna usually it is just layers of ground beef, ricotta cheese, mozzarella, of course my famous sauce. I might kick up the heat a bit with some hot pepper chopped really fine into the meat. You can never have enough sauce either!!! Don't want a dry lasagna but not too wet either..
I have snuck veggies into my sauce as well though. Broccoli, spinach, peppers, onions, etc..

In answer to your question yes I have tried it with spinach and thats what I'm going to put in it tonight as well. I haven't tried it with cottage cheese I use Ricotta and also smoked cheddar and smoked swiss along with mozzarella and mushroom,green pepper onion,garlic I do use ground turkey but I put more veggies in it than meat and my family really likes it that way and so do I.
I don't have to make different pans as I don't have the picky eaters however if there is something in whatever dish I'm preparing that they don't like I just tell them to pick it out

My lasagna is composed mainly of Ricotta and Mozzarella, I have put spinach in the cheese mixture. And the other layers are just a simple Meat and Tomato sauce. If I put mushrooms and the other veggies in my Lasagna I would have to make something else for my family. Since Lasagna (The Way I Make It) is expensive enough without making two different kinds, I have acquired no taste for extra veggies in it.

Ohhhh this got my taste buds to watering! I can't stand ricotta cheese or cottage cheese. So, I don't put either in mine. I will use cheddar, Colby and mozzarella.
I have also used a white cream sauce instead of tomato when I make a chicken lasagna. It was Delicious! This creation came one night when I realized I had no beef!
Besides I have troubles with digesting red meat.
