During this years Superbowl, I went to the bakery to ask them to make me a cake or take one they have and frost it in black and gold for the New Orleans Saints, I thought this would be nice to take to the Superbowl party we was going to, I was told that they could ice it in black and gold but we could not eat it afterwards. That the icing made in the black color would be so bitter we could not eat it, even if they iced it in gold and trimmed it in black. Does anyone know why you can not make black icing. I see hanging in our local store a tube of black icing, is that the same as what they would use at the bakery. If any one know why black is this way please let me know or if they know how to make it so as you can eat it please let me know.

I made my own icing by using ordinary black food colouring mixed with a dark chocolate flavour icing. The cakes are great, the icing tasting of chocolate but it's dark black. Give it a try

What I know about bitter chocolate. Bitter has to do with not putting milk, sugar and salt in it. Milk and sugar are white and tend to make it look lighter brown. But salt is the thing that actually takes the bitterness out and it would not be enough to make it look brown. Since chocolate is brown, I'm not sure I know what they put in that is black. Sorry I'm not much help.
It's been three weeks, so what did you decide to do? How did it work out?
