I've always had a memory, from when I was a little girl. My mother had made potato candy. For years, I've tried to get her to make it again, and teach me how to do it. Well, tonight, she finally, out of the blue, said that we were going to do it. I was ecstatic, at first... Until we started actually making it. And then, she left me alone, with a bowl full of tiny patato pieces, and confectionary sugar. Told me to stir, and that she'd be back later. Each time she came back, I had been stirring the entire time- but nothing was going right! By the time she came back for the last time, my hand was hurting, swollen, throbbing, and I was -sick- of the thought of making potato candy. After a few moments of thinking, we added some more potato, and since we ran out of sugar, we had to add a smidgen of flour. At last, at LAST the candy started to look like it was supposed to. It wasn't so bad after that. We got it rolled out, the peanut butter spread on, rolled it, and cut it into pieces. Delicious, yes, simply put it was delicious. But, I've decided, making potato candy, it's not my thing. Nope, definitely not my thing! I'll stick to making my pretzels. Do any of you have similiar memories, and stories such as this one? Please, feel free to share them with me!

Thank you for the effort, I have tried and tried to get these things right. I am a good breadmaker but for some reason the pretzels just never work out properly. I dont like the egg wash on them, real pretzels in Germany have a wash of bicarb soda and boiling water. I have the taste right but not the texture.

Soft Pretzel Recipe
*depending on size, will make 15 to 20* We've been making large ones. And come up with 16 to 18 pretzels.*
*nonstick cooking oil for pan. We were out and used a butter wrap. We save our butter wrappers for greasing pans.*
1 1/3 cups warm water
1 package dry active yeast
1 tablespoon sugar
1/2 teaspoon table salt
3 1/4 cups all-purpose flour
1 large egg
1 tablespoon water
2 tablespoons coarse salt
Preheat the oven to 425 degrees.
Spray the 2 baking sheets with the cooking oil. Or rub with butter
wrapper.
Pour the warm water into a large mixing bowl, sprinkle yeast over the water and let stand for about 5 minutes.
Stir until completely dissolved.
Add sugar, table salt, and 1 cup of flour; stir until blended.
Add 3 more cups of flour a 1/2 cup at a time, stirring to blend after each addition. The dough should be well blended.
Sprinkle some flour over a clean kitchen surface or board. Turn the dough onto the floured surface. Knead until the dough is smooth and elastic, sprinkling with flour if the dough is sticky.
Roll 1 piece into a rope about 15 inches or any length you desire, depending on the size of the pretzel you want to make.
Put the pretzel on a baking sheet and continue with the remaining
dough.
Beat the egg in a small bowl and add 1 tablespoon of water. Beat together. Brush the egg wash over each pretzel using a pastry brush. But I find that if you dip the whole strand into the egg before twisting it, you get a better coating of golden brown over the entire pretzel. And, if you don't have a pastry brush, you can use a fork (But it's a real complication, and a pain)
Sprinkle the coarse salt over the pretzels with your finger.
Bake until golden brown, about 15-20 minutes. Allow to cool on a baking rack, brown paper bag or newspaper, before
serving.

Well, I'm sure that you could use this recipe, and omit the egg, and use the wash that you prefer. I've ran across many different forms of toppings you can smear onto them to get the golden brown effect. This is just the easiest (And Cheapest, which is important to me. lol) one that I've found.

What a wonderful article. I love it when someone actually posts an article that takes some thought. I have never had potato candy, but would like to try it. In my family, I am the candy maker. My mother made us penuche when we were kids. We loved the sweet stuff. We always thought you ate it with a spoon! One day we were visiting my aunt. She made penuche and said it was ready to eat. We ran to the kitchen to join our cousins and asked where the spoons were. She never let my mother live that one down.

The only story like that I can think of is the 1st time I tried to make chili myself. I wasn't paying a whole lot of attention to what I was doing. I added about a half bottle of red pepper flakes, and way too much other spices. It was nasty needless to say, but I guess you live and learn.
By the way, I had tried potato candy for the first time recently. I had never heard of it before one of my customers told me about it then brought me some to try. At first I was kinda mortified, it just didn't sound good, but I tried it and it was actually rather good. A little sweet for me, but good.

Ow, I can see the tendrils of smoke coming out of your ears just by reading that. ^_^ As for the potato candy, it is sweet. But after looking at the inrediants, an entire pound of confectionary sugar- Are we surprised? It's definitely not something you can indulge in on a more frequent basis.

I don't really have anything like that, but I wanted to tell you thanks for the story. Is that all that goes into potato candy? Sugar and small potatoes? I have never had it.

There are many different recipies that you can use. Some suggest using a certain amount of real potato smashed down, some say you can used mashed potatos (like the instant kind). But all of the ingrediants are potatos, and confectionary (however you spell that) sugar. And of course, the peanut butter that you spread on before you roll it up. If you dare to try it sometime, I'm sure you can find a good recipe online somewhere. But I warn you now, as my Mother (FINALLY) warned me. The first batch you try to make is always the hardest, and rarely comes out right. ^_^

Ah. One of my greatest memories....The first night I made....Squid Guts!
One night my Mother brought home some instant mashed potato flakes. So, I followed the instructions on the box, and made some pretty bombin' mashed potatoes. After trying some, I thought it was good, but wasn't good enough for my tastes. So I thought I'd add a little something.
After a bit of searching through the kitchen, I figured I'd go out on a limb and try something silly. Grabbing a ketchup bottle, I squirted a bit onto a spoonful of Mashed Potatoes. With hopes up I tried the spoon, to find that the taste was marvelous.
So with this in mind I started to mix some ketchup into my potatoes and eat them like that. Well before I had actually finished the bowl, my mother came into the kitchen. She looked at my bowl, growing a look of disgust. (Note that this person eats fish, and enjoys it, so I have no idea what she's complaining about...) So her mouth opens and she goes "What is that?", sounding all grossed out.
But me, being the happy kind of person I am smiled at her and held out the bowl. "Squid Guts. Want to try some?"
The look on my mother's face was priceless as she reeled, and pulled back. I just laughed and pulled the bowl back and explained it was just potatoes and ketchup. (And to this day she still finds it gross, even though I love it)

My little brother does the exact same thing, I personally do not care for the taste at all. And my little brother has always had a strange sense of taste... He puts ketchup on his eggs, ecspecially scrambled eggs. THere was a time when he would only eat peanutbutter sandwhiches if they had a piece of cheese on it. Blachhhh!

I think if we ever try it again, we'll definitely have to try the instant mashed potato recipe that we found.
