It depends on whether you mean crepes, that is with flour, milk, eggs, oil or butter, and a little salt, or whether you mean hotcakes that contain flour, eggs, butter or oil, baking powder, and milk.
With the former, you make the milk and flour almost equal and add two or three eggs. The batter has to be thin.
With the latter, you make the batter thicker and if you use soured milk made with 1 tbsp vinegar to each cup of milk, the batter really bubbles but then you have to add 1 tsp baking soda to it. And the proportions is 1 tsp baking powder to 1 c of flour.
The trouble is that I make my pancakes and hotcakes by portions and do not use measuring cups.
I wonder is it that it sticks to the pan? If you use a non-stick pan, add oil and heat it up, then it will not stick. If you use a stainless steel pan, add the non-stick oil and heat it up, it will not stick. In any case, it is the first one that is the trouble. And when you make crepes, put a little oil or butter on top before you turn them over.
If you make hotcakes or the baking powder kind, wait until there are bubbles on top of the batter and the edges are almost try before turning over.
Oh for both, a medium to medium hot heat is always best.

Much of it is by experience. when I first started, I was not that good, especially with hotcakes. but with crepes or pancakes I learned first from my father and his secret was to let the batter sit overnight, and then I also learned that if one puts oil or melted butter in it, it is much better and does not stick as badly.
These are things they do not tell you in recipe boosk.

all you have to do is buy pancake mix mix it with water until compleetly smooth (when theres no more lumps) then pour the batter onto a pan on the stove until you have a small cirle then let it cook until the bottom turns sligthly brown then flip :] it all depends on how you like it really just experiment a bit it really is quite simple good luck let me know how it goes! :]

You're welcome. It is easier to try the whole recipe out then use a box They put things in boxes that you may not want to eat.
