As the spring time is here so starts the salad season. Macaroni, pasta, tossed, and of course potato. What's your favorite? I love tossed salad. My favorite would have to be a mixture of tossed and pasta. I do make a great potato salad. I put in small diced green peppers and a little relish. Dont tell anyone...lol. I love my tossed pasta because its kind of a pot luck thing. I used the mixed pasta with different colored, supposed to be veggie pasta but I think it all tastes the same Tomato, red onion, different types peppers, boiled eggs, crouton, cukes, bean sprouts, etc. Try it! I promise you'll like it. What kids eat bean sprouts? Mine do because they taste good with the salad. Tell me your secrets to a great salad? I love to try new things. Also give me some ideas of new things to add to my tossed pasta salad? Maybe we can call it MyLot salad. Please share your spring salad ideas...dl

The secrets to my salads are good, homemade and well seasoned dressings, and a variety of fresh ingredients. I, too, like mixing pastas with greens, fruits with vegetables and greens, etc. There are so many good potato salads, but I think my mom's is the best because of the seasonings. Adding fresh beets and other veggies to greens is great, also adding beans and cheeses and various kinds of nutmeats. I also like to mix together two or more kinds of salad dressings sometimes, or just serve my salads with more that one dressing at a time. Any addition of protein, like egg, meat, chicken or seafood enhances salads. Except for the classic Caesar, I prefer a variety of ingredients in a green salad. Standards like tuna, chicken, seafood and even some meat based salads stand alone or dominate as the main ingredient, but there are many variations in additions, e.g. fruits, veggies, olives, nuts. I like fruit salads in the spring, as well as veggies like artichokes, avocadoes, asparagus, hearts of palm, and peas; the greens are refreshing and appealing to the eyes as well as tastebuds.

dloveli..I think the secret to a great (green) salad is a great vinegarette. There are endless ways to make them and the great part is that you usually have the ingredients in your pantry. I love to play with them and try all different types. I think the problem with most restaurant vinegarettes is not enough salt and pepper..So simple yet so important. I made a pasta salad today for tonight that I love. Its roasted eggplant with basil pesto. I put it over any short pasta and it is yummy. I also have lots of other roasted veggi recipes that I puree and make into sauces..Ive been eating a lot more vegetarian lately..not beacause I'm against meat at all, I just can't afford it. I've spent a lot of time reading vegetarian recipes and to my surprise really enjoy eating like this. Just because there is no meat does not mean its not satisfying and filling..quite the opposite. I think I've created a monster,,just have to convert my husband now...Its cheaper and healthier and can be just as interesting as any meat dish out there..Hope your daughter is doing better and don't work too hard..

I make a basic cold slaw, but add pecan pieces and sliced banana to the mix, the toss with hidden ranch dressing. If I have dried cranberries I also add them.

You can make a salad out of lots of things. I make potato and also potato and egg salad from scratch. I also like a nice tossed salad of whatever veggies are available or in season, usually with a lettuce base. I also like a nice pasta salad with pasta as a base.
I usually use commercial Kraft salad dressings as well some mayonnaise in some of my salads.
If I do not have a salad for a few days I find myself desiring one and get to the point of a must have after a few days more. I try to have salad at least twice a week, and preferably more.

We went to a birthday party over the weekend and they had the best tossed salad that I've ever eaten in my life. It was lettuce, cucumbers, avocado, green onions, cheese cubes, walnuts and there were a few other things in it as well. It was delicious. In fact, they had ranch dressing to go on the salad, but I felt like the blend of the vegetables with the walnuts and avocados was flavor enough and didn't eat a drop of dressing on the salad.

Hi dloveli!
I love fruit salads! Aside from being nutritious, I also enjoy it because of the perfect blending of fruit extract and juices. It makes me feel good and relaxed whenever I have one. I also love veggie salads :)
