In winter, lots of corn cobs will be sold in my place. We eat it by roasting it in the burning charcoal and apply a paste of green pepper, fresh coriander leaves,salt, lime juice, and mint. It is very tasty. We even cook it with little salt and apply this paste. With the dry seeds, we make pop corn and add little spice and eat hot. With the tender kernels we prepare sweet corn soup. We take Corn flakes with fresh fruits and nuts, with milk for breakfast and corn oil for cooking. Do you like corn? In what way do you use it?

One other way we could enjoy eating corn is to let it grow to be ripe. This could be ground into corn flour, sifted and kneaded into dough. Now this doesn't have the adhesive nature of wheat flour so one need be very adept in making "rotis" out of it. You wouldn't be able to roll them with a pin. This is what is typically called [I] makki di roti[/I] in Punjab. To this you need to add [I]sarson daa saag[/I]. Finely chopped tender leaves of the mustard plant boiled and cooked to softness, on a slow fire, with a dash of suitable garnishing will be the ideal side-dish. The cold season is the right time. But I found the makki di roti made by people living in the Telangana-Maharashtra border villages are tastier than those made by red-blooded Punjabis.This(the Telagana-MaharaShtra version) is a treat to eat. Only once I coud savour it in Bangalore. That was way back in nineties, when the Railways had put up an exhibition and a Sardarji had a stall offering choice Punjabi dishes. The [I]makki di roti - sarson da saag[/I] had the greatest number of takers. I have been to Punjab many times,but just once that too in Haryana I laid hands on this for a breakfast. Lord! that wasn't very good. The rotis were like daapaT( a Maharashtrian kitsch). Well, I love and enjoy all that you have mentioned, except may be Corn Flakes (my last resort for breakfast). There are two products of nature I love in any and every form. Mango(the King of Fruits)and Maize(the strong cereal)

Yes. I do agree that Makki di roti and Sarson daa saag is the best combination and I too tasted it in the North. In Sahibabad, UP where we lived for 3 years, my house owner's wife is an expert in making these rotis and whenever she happens to prepare them, she will send some to me and my DH with some home made butter and sardon daa saag and that was the first time, I tasted it and I really liked it. She even tried to teach me by giving some maize flour and making me to do the rotis. But it did not come out well without a pin. So I mix some wheat flour to come out well.

Perhaps the Maharashtra-Telangana family whence I had the first taste o makki di roti might have also mixed wheatflour for the "sticking together". But that had not brought down the taste nad feel of maize. Like a very disciplined mridangist in a Carnatic music kutcheri(this is also called aDakki-vAshippadu) the wheat flour would have remained in the background without either contributing to or spoiling the taste(by taste I mean the natural sweetness of good quality maize)but I dont think they might be doing that in Punjab Haryana, so I wasn't able to get that taste in the original land of the Maize Corn!?!

In Sahibabad in front me only she just put some kernels of maize in the flour grinding machine and made a powder and took that fresh powder in a big plate, poured some luke warm water and without adding salt started kneading with the fingers but not kneaded like we do for chapati but like gulab jamuns. and started flattening it her palms and with perfection and put it on the tawa. I too tried but small small pieces started falling down making the roti in the shape of India map and not round like her

Yes vathsala dear, i like corn too, i buy them from market and my wife or daughter in laws fry them over coal fire, apply salt and lemon juice, but we donot cook as you say, ok we will try one day.. Sorry for late response.. Thanks for sharing. Welcome always. Cheers. Prof

Yes Bhuvanji Lots of maize preparations are there out of maize. Even we can make bajjis out of very tender maize. bajji means in hindi we say pudiyan. very tasty. take out the maize seeds and mix with veggies to make sabji or just cook with little salt and eat it

Hi dear, Here too it is available in winter. People are busy in making the corn in every nook and corner. It is available in abundance in winter. In summer it is available in the roasted form. In winter, they are making the same on fire and applying lemon juice and salt for taste. It is very tasty and healthy to eat.

Hi dear I know in Delhi plenty of corn is available during winter season and they will apply lime and salt over it and if it is eaten hot, the taste is simply superb. It is good for health and also it oil and spice free.

hi vathsala, yes i too are interested in eating corn cobs,but here the quality is very very poor,no taste in the corn,what to do this is only available here,if i visit Banglore or Hyderbad,there i find good corn cabs,but i will not apply any thing on the surface of the corn,my wife will cook corn fry with corns,have a nice day

hi vathsala garu, thanks for the comment,i am not interested to eat masalas,from the beginning i am eating the corn candle without the masala or even lemon also,you know some sweet corn,conrn candle also available,these are very sweet and but some expensive one or two rupees more,last year i eat it ,have a nice day

Hi yugasini In Hyderabad, you will get good quality corns especially in Moharramzahi Market. Try out when you go there in Winter. Instead of eating it just by grilling in the burning charcoal, you try by adding some green masala and I am sure you really like it.

Hi Balu You are so lucky as you are always moving around the plants and fresh air enjoying the beautiful nature with the chirping of the birds. Side by side tasting the freshly harvested maize corn too. It is really very tasty when we bite the corn cob freshly plucked from the plant and the milk oozing from the kernels. I am really of you

Hi Aunty, [i][/i] Even i eat corn with roasting it in the burning charcoal by applying salt and lemon. Now a day in supermarket we get the sweet corn sold so i get them put little salt and water and cook it To this cooked kernels i add little butter and add chat masala or squeeze lemon or put chilly powder according to our taste it will be very tasty to eat like this. deepooooo Yes i too like eating that way. but here in our place it is prepared by burning it in burning charcoal and apply a paste of greenchilli,mint,fresh coriander,salt,lime juice and garlic paste and it gives a spl taste. I make sweet corn soup also some times mixed with mushrooms

Maize corn is one of my favourite eatable item. Whenever I go out, I buy roasted maize quoted with chilli and salt paste. If I get a raw one, I buy it, roast at home, apply the paste and eat. We even boil it and eat with some hot, salt paste. Popcorn can also be made and will be fresh and tasty. My mouth is watering vathsala, let me go to the market to find them.
