What recipes or ways of making are there out there for my own pineapple juice at hoome. Im making it at home, or desire to, because it'll be healthier and without as much sugar and chemicals and preservatives and such. Does anyone do this?

My grandmother used to take the spin of a pineapple and thrown it in a jar(container), add water and some sugar(you can choose a substitute) and leave it in the fridge for around 10-14 days. It would draw the sweet taste of the pineapple and quench any thirst. Its also a good use for something one would throw out anyway.

Is it the sugar that draws out the juices or just time and water?

The sugar is more to sweeten the liquid but one could use a substitute, time and water will draw the taste.

I make my pineapple juice using the thick skin of the raw pineapple plus the round hard core of it. I put to boil with a lot of water and sugar to taste and let it boil for about 20 minutes. I separe the liquid with a colander and put in bottles. Itçs very easy. I use the raw pineapples for deserts.
