Arriving in México, from my native country Argentina, I met with a traditional dessert consumed in the hot season, and arre called "scraping or scrape (raspado o raspa), wich is to put crushed ice in a glass, which is added different fruit concentrates. For example there scrape strawberry, vanilla, pineapple, banana, mango, are very simple to prepare, that's why more than a year ago because they did not perform them thought to sell?
Search recipes fruit concentrates and how to perform, is the most laborious, because cooking takes time and packaged so as not to spoil.
As for the crushed ice, ice maker is a vendre it crushed, but I preferrred them in the traditional way as being made fron their origins, that is with a utensil called a "brush" with which "scrapes" directly from the block of ice that previously purchased, the action of scraping the ice was what gave him the name of "scraping".
To have an idea take a clean glass, plastic, the bottom is coated with a substance or preparation of choice fruit, eg mango, put a bit of crushed ice, I pressend and pushd back more "preparation of fruit" which is generaly liquid (pureed fruit), put back more ice, and so is by completing the "layers" to have a full glass. In the end, in the last ice sheet, is at your choice place the same preparation of fruit that cae placing or place of another flavor, also can "finish" with pieces of fruit in syrup...
There is no strict recipe, here it uses the "imagination of the chef!! hahaha, If informace want more you can search your favorite Search of, there are also videos on youtube to see what they are. The keyword is ; raspados, raspas, raspados de hielo.
