I enjoyed watching war movies all the time. It shows as the hardship and pain of war and make us realize that it is a living hell. I will start with my own:

hands down Saving Private Ryan. A lot of the movies you mentioned are good, sure, but none of them are as visceral and as moving as SPR. From the groundbreaking opening scene, to the characters. Tom Hanks' character alone is a bomb by itself. A schoolteacher, out in the middle of Europe, fighting nazis.
And for what it's worth, they were robbed of the Best Picture award. Shakespeare In Love? Seriously??

I personally love Schindler's List and Black Hawk Down. I also love Wind Talkers, Enemy at the Gates and Behind Enemy Lines. The movies you have mentioned are all interesting and I like it as well.

I don't watch as many war films as I used to do but my favourites would be quite a few of those you listed like Schindler's List, Apocalypse Now, The Deer Hunter and Black Hawk Down. My favourite at the moment which I watch at least once a month is We Were Soldiers with Mel Gibson set during the Vietnam War. I think it is a really powerful film.
