I have no idea what GMC and CMC are but ice cream does contain animal extracts in the form of milk products, fats and, sometimes, gelatin. Other ingredients are water, sugar, flavourings and colourings.

For a full description of the manufacturing process, ingredients and detailed description of how those ingredients are derived, there are a series of pages here: http://www.foodsci.uoguelph.ca/dairyedu/icmanu.html The above page describes the manufacturing process but there are hyperlinks to 'ingredients' and from thence to a description of the derivation of the various milk solids, proteins and fats which are used in the mix.

The only things I can think of for 'GMC' and 'CMC' are 'Goat's Milk Concentrate' and 'Cow's Milk Concentrate'.
