Butternut Squash

Hello mylot friends,
I need more help in the kitchen!
I purchased a butternut squash yesterday and I would like to know what I should do with it. I would like to roast it but do I just treat it like a potato and part boil it first, or do I just dice it and put it straight in the oven?

I just LOVE Butternut Squash!!
I use it a lot as it's great for he old diet.
I make it into soup, have it mashed - on its own or with potato and I love BNS chips or roasted.
There is no need to par boil it first, just cook it when peeled.
By the way the best way to peel one is with a potato peeler as they are very hard to peel.

Butternut squash is a delicious food!! When I cook this food I will slice it in half top it with seasoning of choice and drizzle with oil. Wrap foil around it, not tightly. I will then bake it at 325 for 45 min. It is so yummy! Or you can also cook butternut squash in a soup. Like lentil soup by cutting it up into squares and simmering it for 3 hours.

Butternut squahs is by far my favaorite squash out there. I cut it in half, therefore you have two long squahses, i end up putting garlic and butter with some pepper in the whole that is there on the squash and then cut a little opening up through the middle so the whole squash can get some seasoning. I have been doing it this way for a while and when i don't eat it all i throw it in a pan with some broth and make a butternut squash soup and that is very yummy too.

It's been years since I cooked a butternut squash. I'm thinking though that I cut it into slices, or chunks since they are so oddly shaped. If I'm not mistaken I put some butter on it and let it bake.

Hi Beauty..I cook butternut squash a lot as it is one of my favorite vegetables and I always roast it. This is what I do. Peel squash, cut into equal size pieces, chunks. (it is important to cut them pretty much all the same size so that they cook at the same time) Drizzle with extra virgin olive oil and season with salt and pepper. Make sure all pieces are coated with oil and s&p, use your hands. Place on cookie sheet or other baking pan and roast at 400 degrees until done. (insert a fork and when it goes in with no resistance, its done,,just like potatoes) I then either mash them with butter and a little brown sugar or honey or maple syrup and recheck seasonings, or just add butter s&p and serve in bite size chunks..YUMMY
