Stuffed Bell Peppers

Hello all i am looking for a new stuffed bell pepper recipe my old one was simple but not good for you because they were the frozen ones you just put in oven i would like to make some homemade for my father he is 75 and blind and thinks i make them i want to make some for real please help thanks

There are so many recipes for stuffing peppers (or cabbage, courgettes, mushrooms or almost any stuffable vegetable) that you are really spoiled for choice.
Most of them are based on ground meat, rice and a nut or seed of some kind (such as pine nuts or sunflower seeds) with seasonings and a sauce. Here is just one recipe which seems close to what I usually do: http://simplyrecipes.com/recipes/dads_stuffed_bell_peppers/
