Killer Pot Roast

Yesterday we had a nice pot roast that we fixed a little differently than usual. It was so good, we have decided to make it again this Sunday for guests. We put the roast in the slow cooker with carrots, celery and tomatoes and cooked it as we normally do. We didn't have any potatoes so we cooked up some pasta. I put the pasta and veggies together along with some European style butter pesto sauce. I've had pesto before but never the butter kind. Mixing it with the tomatoes and other goodies made the most scrumptious side for our roast! I loved mixing each bite of my roast with the sauce and veggies. The blend of flavors was exquisite! If you haven't tried fixing your pot roast this way, try it! If you can't find the butter pesto, try the regular pesto sauce. It's bound to taste just as good. Bon appetit!

That's the way I like my veggies in veggie soup, one time the roomie cut the celery too big "so you can pick them out" but the fact is that if they are big, they don't cook right and I WILL pick them out!
"Cut them small so they cook and I will eat them next time" I told her.

How funny...I'm not very big on the veggies, either, but with this way of fixing them I loved them. My daughter cut up the veggies with this roast and I like them small but she had them huge! Once I added the pesto and it blended with the meat juices that were already on the veggies, though, they were to die for! Next week I cut the veggies, myself, so they'll be small. (I like to slice them with my food processor, nice and thin so they cook up really good.)

Well I read your post with trepidation!!
I thought that you had cooked a pot roast that had been responsible for kiiling off half your family
That does sound a very tasty and unusual recipe, I love experimenting like this and just 'throwing it all in' - it's amazing what you can come up with!!
Anyway I am very glad that your pot roast was 'wicked' in a good way anf not the source of a killer plague!
