i always serve meals with veggies. and i do it "secretly". lol. like putting some veggies like minced carrots and cabbage on their burger patties. serving coleslaw with their fried chicken, which they absolutely love. just tell your cousin to be creative.. and sneaky. :))

All children like pasta. And you can make a sauce with a lot of veggies. I make a lot of pasta sauces to unfreeze when my grandkids show up without warning. I add parmesan cheese (they love it). And a special treat is that they can put as much as they want (I put the maximum amount at the table first).
1. Make tomato sauce using fresh tomatoes, grated carrot (they must not see it), and you can even add a little touch of ketchup so they taste better to them (leave your portion aside first)
2. Pasta with pesto sauce. Pesto needs basil, olive oil, garlic and a blender. I don´t add nuts for my grandchildren as not all of them are into nuts.
3. When they start to love pesto, make a mixture of pesto and cooked well drained spinach.
4. You can make lasagna with many veggies inside as lond as they don´t see it.

Seriously, carrot raisin muffins, carrot cranberry grape salad.
Spinach pie with phyllo dough and lots of mozzarella cheese.
Tuna stuffed olives - yum
California rolls, full of rice, and vegetables - they look like cookies.
Kids love potato chips, trying something like terra chips will work.
