I thought you might find this interesting. When cooking with garlic which I do almost daily, if you let it sit after you chop it it adds health benefits! The latest scientific research tells us that slicing, chopping, mincing or pressing garlic before cooking will enhance the health-promoting properties of garlic. A sulfur-based compound called alliin and an enzyme called alliinase are separated in the garlic's cell structure when it is whole. Cutting garlic ruptures the cells and releases these elements allowing them to come in contact and form a powerful new compound called alliicin which not only adds to the number of garlic's health-promoting benefits but is also the culprit behind their pungent aroma and gives garlic its "bite". The more finely the garlic is chopped, the more alliicin is produced. Pressing garlic or mincing them into a smooth paste will give you the strongest flavor and the greatest amount of alliicin. The stronger the smell and flavor of garlic, the more health-promoting nutrients they contain. So the next time you chop, mince or press your garlic, you may have a greater appreciation of its strong aroma knowing that the more pungent the smell the better it is for your health! Because this process takes some time, I recommend letting garlic sit for about 5-10 minutes after cutting while you prepare other ingredients So cook with garlic often. It pairs with just about any food and get healthy at the same time!

I love garlic and know about quite a few of their qualities..Though I didn't know about letting it sit for a while, I will keep that in mind next time I have fresh garlic..For now I just have the minced in a jar.. Garlic is suppose to be an excellent natural antibiotic, but my favorite is if you eat it a lot,(like I do) the smell or taste of it in our bloodstream keeps mosquitoes away..:)

I think this year's mosquitoes have immunity, or extra potency. Usually they do not bother me, if they bite me I do not swell, etc. This year all bets are off. They could join forces and carry me away. Time for more garlic.

Yep, I noticed that too, but I thought it was because they were getting into the house. I also have increased my garlic, but mostly with the powder stuff. The fresh is probably more potent..

Hi Carm and Heather I haven't been bothered too much by mosquitoes this year but I have so much garlic in my system that nothing bites me. They land on me and they say, "I'm the hell out of here!" Jim, on the other hand is getting eaten alive, (wish full thinking) It is also good for dogs in that it supposed to keep fleas off them. I haven't been doing that lately but I used to and it is true. I bought the garlic gel caps and gave them each one a day and for awhile saw no fleas anywhere. It is quite the "natural" medicine and what it does for food, well lets just say that without it. I couldn't cook! Thanks J

I love garlic. In fact I couldn´t cook without garlic. But I don´t use alot: just a bit to almost verything. It is the same with onions and with the onion family. I have a kitchen gadget to grind the garlic. In spite of being a good cook, I don´t chop too thinly with my hands anymore. My eyes and fingers are to blame. Fortunatly, they are making these nice gadgets to do almost any thing. (A friend of mine just brought me an avocado slicer the other day. I thought that was TOO much!!!) My youngest daughter put some garlic in her baby´s formula. They never had a cold!

I do have one. It´s easy and can be washed in the dishwasher also. I also like fresh spices most of the time. I do think though that some dry spices serve other purposes. I have fresh oregano at home and I prune it and dry some for pizza toppings and some salad dressings.

Thats very interesting about the babys never having a cold due to the addition of garlic. Amazing. You should look into a spice grinder or a coffee grinder and use it in place of chopping by hand. I have one and it is a god sent item for me. They are inexpensive and really make life easy when you have a lot of chopping or grinding. I also have a mini food processor that I picked up for 10.00 at Walgreens that i don't know what I ever did without. I use it daily, espcially when I don't feel like chopping onions garlic and whatever. There is nothing like fresh ingredients. Although sometimes I have to use dried spices, I find no comparison to fresh. I am now growing, or trying to grow, a lot of the things I use daily (I cook for a living) and the money savings is fantastic. Luckily, for me, herbs are very easy to grow!! Thanks for your post. J

I did not realize that. I wonder if the same is true for onions, that they form different compounds after cutting. My son used to eat a ton of garlic. Do you know, how does this relate to the dried forms of garlic, minced garlic or garlic powder? I am getting hungry fro something garlicky now.
