Which has the better performance among the 3 in terms of speed? I hate smartphones that reacts sluggishly. I haven't tried them all yet, that's why I'm curious. And what about the functionalities? What would you recommend?

I can only tell you about 2. The Iphone in terms of speed and performance has got Droid phones beat. Droids offer higher processors but it has a huge flaw. They constantly run many apps at the same time. This often hinders performance and battery of the device. So Android offers more phones with higher processors that will drain your battery even more. So rule Androids out until I say about a year or more until they get the kinks out and establish a standard OS to go by.

Most people don't see the battery issue while comparing the Os which is fast and so on. We are not using computers so the issue of power consumption is very important. More processing, higher processors would all lessen the talktime and battery power cycle.

I haven't tried the android, but the apple lacks multitasking but they seem to have worked upon it lately. For now i will go with symbian.
