here's one:
Ingredients:
* 1 - 2 green onions, as desired
* 2 large eggs
* 1 teaspoon salt
* Pepper to taste
* 4 tablespoons oil for stir-frying, or as needed
* 4 cups cold cooked rice
* 1 - 2 tablespoons light soy sauce or oyster sauce, as desired
Preparation:
Wash and finely chop the green onion. Lightly beat the eggs with the salt and pepper.
Heat a wok or frying pan and add 2 tablespoons oil. When the oil is hot, add the eggs. Cook, stirring, until they are lightly scrambled but not too dry. Remove the eggs and clean out the pan.
Add 2 tablespoons oil. Add the rice. Stir-fry for a few minutes, using chopsticks or a wooden spoon to break it apart. Stir in the soy sauce or oyster sauce as desired.
When the rice is heated through, add the scrambled egg back into the pan. Mix thoroughly. Stir in the green onion. Serve hot.

This is my recipe for Special Fried Rice that i make evry often, it is also low fat so a good healthy meal.
SPECIAL FRIED RICE
Serves 4
Cooking oil spray
2 eggs, lightly beaten
100g mushrooms, sliced
6 spring onions, ends trimmed, sliced
100g cooked ham, chopped
100g cooked prawns
100g cooked chicken, chopped
135g frozen green peas
300g cooked brown rice
1 ½ tabs dark soy sauce
Heat a wok over medium-high heat. Lightly spray with cooking oil. Add the eggs and swirl to cover base and sides. Cook for 2 minutes or until just set. Remove from the wok. Roll up and thinly slice.
Lightly spray the wok again. Add the ham and chicken and stir-fry for 2 minutes. Add the mushrooms, spring onions and peas and stir-fry for a further 3 - 4 minutes or until the vegetables are tender. Add the sliced egg.
Add the prawns, rice and soy sauce and stir-fry for 3 minutes or until hot.
Remember that the rice must be cold otherwise it won’t fry properly and will become a sticky mush

This is the recipe I use all the time when I cook fried rice...
2 cups cooked long grain rice
2 eggs
1 tsp soy sauce
3 tbsp oil
6 rashers of bacon chopped
1 clove garlic
2 tsp grated root ginger
6 spring onions
1 tbsp soy sauce
Spread rice out on trays & leave to dry. Lightly beat eggs & first neasure of soy sauce. Heat 1 tbsp of the measured oil in a wok. Pour in half egg mixture & cook intil golden on both sides. Repeat with remaining egg. Cut egg into 1cm wide stgrips. Set aside. Heat another tbs of oil & cook bacon until crisp. Remove from wok. Cook garlic, ginger & spring onions pver a low heat. Add remaining oil, heat. Add rice & stir-fry for 5 mins. Return strips of egg & bacon to the wok. Stir-fry to heat through. Add sevond measure of soy sauce. Stir to mix in.
I normally add peas & even bits of chicken, etc to this dish as well.

In my case I usually stir fry my mixed vegetables in some oil first, then add some sugar and soy sauce for my flavor, then I put my rice in followed by an egg. Stir it around a bit and tada my fried rice is done. I don't really follow an actual recipe or anything like that. I kinda add as you go and I stop once I get a taste I agree with.

In my case I do prefer simple fired rice recipe. i.e Just one spoon of oil, one onion, 2 chillies, one tomato , half carrot, small amount of peas and 2-3 Pisces of beans, salt and if you want make color just add little red chilli powder. I like simple and plain fried rice.
