Hello oats and welcome to myLot. I hope you enjoy being her as much as I do. I'm sorry about your health problems. You can replace eggs in any recipe with flaxseed. You grind the flax seed in a coffee grinder until it is very fine. replace each egg with 1 teaspoon of flax seed powder and 1/4 cup of water for every egg to be replaced. I got my flax seed at the health food store but I think you can get it at any grocery store too.You can learn more at http://www.egglesscooking.com/2008/10/15/egg-replacement-event-flaxseed-meal/#axzz0w21eAQme

coats yes it well keep for a while in the fridge. I some times add flaxseed to my steel cut oats for extra fiber and omega-3 fatty acids. It can also be added to muffins and breads.
