What variations do you suggest for a traditional Spanish omelette...???

Everyone loves the traditional Spanish Omelette. But have you gone a step further and brought out variations and improvisations to the traditional recipes and ended up with an absolutely delicious recipe..??? Please share your secrets.

I love the fried onions and potato tortilla but I add some spanish sausage (longaniza) when I have it. I donĀ“t put tomato inside the omelette but prefer some tomatoes on the side.
I love it anyway so do tell us about your own variations.

usually i'm fine with just onions and tomatoes on my omelet. but if i'd like a special spanish omelet i'd add chorizo, parsley, then cheese coz i love cheese ^__^
