How to make (nearly) perfect chips and burgers?

My daughter started to love chips. I dont think its a bad thing, its just the way its prepared might be bad. Thats why I want to make them home, I did a couple of times, it didnt turn out bad. Home made is always better anyway and healhier too
I know no recipes are allowed that why I am just asking for guidlines, like what to look for and what to avoid.
I am starting Uni next week and would also like to know how to freeze them properly. I did google it but couldnt find much on this matter...well the tip to throw them into water and boild them for 2 minutes was certainly better than me putting them straight into the freezer- you can imagine they all turned black-not sure what I was thinking, maybe hoping for some kind of wonder?
Does anyone have experience with it?
And how to make the perfect burgers? My husband was dreaming about burgers some relatives used to prepare... which makes me want to make better burgers...

I just started making my own "chips" so I am not sure how to preserve them. I slice the potato super thin and then put it in olive oil. I had to stop doing it every night because I was gaining weight! lol!
