Have you ever made your own eggrolls?

I'm spending a couple hours this morning making egg rolls. My dad, who is 89, mentioned that they just can't seem to find decent egg rolls in the small town he and my stepmother live in. I used to make my own so I'm whipping up a batch for him using a Chinese cookbook I've had for about 20 years. They're healthier and lower calorie than the ones you get in restaurants and when I tasted one, they were as good as ever!
Have you ever made your own egg rolls? I used to enjoy it but I have to bring a chair into the kitchen now, 20 years later the body isn't as strong as it used to be! If you do, are there any special ingredients you use?
I like homemade egg rolls much better than the restaurant offerings!

I have not made my own eggrolls, but, now, because of your discussion, I will try to do just that because they are yummy. Do you fry them? Do you steam/saute veggies first? Any special ingredients besides cabbage and carrots?
I did try to make Ming Tsi's mother's dumplings years ago, including the wrapper dough, but it was so hard. I, too, need to sit while working in the kitchen these days.

Epicure, spring roll wrappers are different. With egg rolls you use won ton wrappers, that's what it usually says on the package. I don't know where you would find them, they used to be in the produce section but this time I found them in the refrigerated natural foods section for some reason. Spring roll wrappers are like rectangles while won ton/egg roll wrappers are square.
I just used canola oil for frying them but using sesame oil to stir fry the meat and vegetables gives it a wonderful flavor.

I wish they would make kitchens where you can lower the appliances!
Egg rolls are easy. Stir fry your meat and vegetables in sesame oil. Some people scramble and egg in there but I didn't this time. Let the stuff cool, never use hot filling with an egg roll wrapper! I also put a little low sodium soy sauce and a bit of sugar or honey in the filling. Then just roll them up and fry them in some oil. You can also bake them but they're not as crispy.

Thanks, dragon, for the discussion and the tips. Do you know if spring roll wrappers are more like crepes? I'm on it re making eggrolls very soon. What kind of oil do you use? I'll probably use vegetable oil.

Never have tried Egg Rolls or made them to be quite honest. I have read more or less how you make them.
Very nice Recipe will take it into account if I can get around to doing any.
Would like to try though.

They're enjoyable to make. What I like is that while I love egg rolls, I know what's in them when I make them myself. And if you want to freeze them, they crisp up very nicely when you reheat them in the oven or toaster oven.
I've also gotten some ideas from the other responders and will soon be trying Mexican egg rolls, with fajita filling!

Mexican Egg Rolls with Fajita filling. Totally yummy yummy that´s all I can say about that. Delicious they have to be with that description you have given them.
The nearest thing I have got to doing is Scotch Egg Roll you put the Sausage Meat around the egg and dip it in beaten egg and then breadcrumbs. Very nice too serves great with Salad.

I love most Chinese food, although I've found healthier ways to make a lot of it, mostly avoiding oil. But I do fry the egg rolls, the heck with health, it's one of my few indulgences and I haven't had them for years.
Most people think Chinese is what they see in the restaurants and buffets but if you watch the wait staff eating their lunch they don't touch the stuff served to the customers--they eat stir fried vegetables with very little sauce, small amounts of lean meat, not that sauce-heavy, deep fried stuff the Americans like!

Hi Dragon. The other day my daughter was watching someone make eggrolls on the Food Network channel. They didn't look too difficult to make, so I might try them. My daughter LOVES Chinese food. Everytime we go to a chinese restaurant she laughs at me when I eat the eggrolls. I usually take about half of the filling out and add rice to it. She keeps saying "mom, you need to make you own messed up eggrolls." I guess to her, I like mine "messed up". I would like to make some with more meat in them and more of the vegtables that I like.

That's why I like to make my own, I can have them exactly as I want them! They are easy to make so you should try them. It would be a fun thing for you and your daughter to do together or if you have grandchildren they'd like it, too!

I haven't given them to him yet, I'll be leaving soon to go to his house. I love my dad and after all he's given me, all the sacrifices he's made for me over the years, it's the least I can do to give him something he craves!
I use egg roll wrappers, also called won ton wrappers, from the store. I cook the meat of my choice with chop suey vegetables, a teaspoon of sugar and some soy sauce in sesame oil. I let the mixture cool, use paper towels to get the excess oil off, then wrap them in the wrappers using a small amount of my mixture. Then I fry them in oil. They are delicious!
They are really easy, just a bit time consuming. I spent a total of 2 hours preparing and frying and I got 14 beautiful, yummy egg rolls!

Hiya dragon. No, I've never made my own egg rolls, but my mom has. Her's were actually the Filipino version called Lumpia. Some of the ingredients she used were carrots and bean sprouts, along with beef and potatoes, I believe (I haven't had it in ages, so I'm trying to go by memory). Everyone loved them, and I'm not just saying that because she's my mom. They were really that good!

Someone else mentioned lumpia and it sounds delicious. It got me to thinking about different things I can put into the wrappers I have left! I think some Mexican would be delicious, maybe a fajita mix finely chopped. Oh, the lovely ideas we get here at myLot!

I've never made homemade egg rolls. Though hubby has a co-worker from Korea who used to bring them in from time to time and said they were awsome. Not that he took an extra home for me to try. :0(
I've found I don't like what most restaurants have as egg rolls. Many have no flavor, no nothing just cooked cabbage in a crunchy shell. I'd love to know how you make yours.

Wow, it's a good thing I looked--I just saw your post, myLot didn't notify me or it got lost in the masses!
I buy a can of chow mein vegetables and fry them and whatever meat I'm using in sesame oil, just a little. I also add about a 1/2 teaspoon of sugar and some low sodium soy sauce. After the meat is all cooked I blot off the oil and let it all cool. Then I roll them up in the wrappers and fry them. They're great! The wrapper package shows you how to wrap them.
They are healthier and lower calorie than what you get in restaurants and they taste a lot better, too.
I have some wrappers left so this weekend I'm going to make fajitas and see what a Mexican egg roll tastes like!

Hi. dragon54u. No. I have never made my own eggrolls. I am sure that yours are very delicious. I have eaten egg rolls that were frozen and out of the box. I cooked them for about two minutes in the microwave. I just have to make sure that they don't get very hard, if they do, I will not be able to eat any. I hope that you and your father enjoy eating egg rolls. My favorite is the pork and chicken flavor.

I made my egg rolls with a microwave when I had young children, too! Who has time to cook complicated things at that time of life?!
I do like those frozen egg rolls but I like them very crispy to they go into the toaster oven. But the ones I make are lower calories and seasoned just right. My dad really liked them and so did my stepmother. I may give them a batch for Christmas--after all, there's not much you can get for people in their late 80's who have everything!

Oh~ I would love to make my own eggrolls! I yearn for them! I love the taste of eggs and argh, talking about it makes me drool :) So far, I've made my own omelette and waffle. I've not tried any other side dishes yet. Haha.

I enjoy getting egg rolls from a chinese restaurant. you can even buy them in the grocery stores now. i have never tried to make one myself. I'm not sure they would turn out as nicely as the restaurant variety.

I like my own much better than the ones from the store or restaurants. I can put what I like into the filling and cook it with less fat. I can make them sweeter or meatier, any way I like. And the wrappers are not as thick as the ones in stores and restaurants so they are flaky and crispy and yummy, even when you re-heat them in the toaster oven!

It's been a while since the last time I made egg rolls! Now you made me want to prepare them again.
I prepare egg rolls at home sometimes, using a very easy recipe, but I'm not sure if the egg rolls I prepare are like the ones you're talking about, as it can be a very generic name

I have heard from another in this discussion whose household does not allow eggs. People have different preferences and although I would not like to follow a vegetarian diet, it is a very healthy lifestyle. You may not get to have egg rolls at home but you are healthier for it!

Hi, I'm a new one here. I've never made egg rolls myself, but I guess the process will be fun. Maybe chinese people are more like egg cakes. Usually we put some onion, pepper, salt and seafood with the beaten eggs, then fry the mixed materials till they turn brown. The delicious egg cakes are done.

You should try it Gerty! The egg rolls you get at restaurants are high calorie but make them at home and you cut those calories in half and they taste so much better!

I haven't ever done that, but I know you can make them with won ton wrappers. I bet they would be delcious if you could get a good recipe for them. I think they would be good.

I just finely chop my meat of choice, bean spouts, water chestnuts and bamboo shoots. I cook them in sesame oil, add some soy sauce and a bit of sugar then let it all cool and blot off any liquid. Roll them in the wrappers, fry and you have delicious egg rolls! Better than the restaurants and lower calorie, too!

They're not hard to do, Bunny! It looks hard when you read the recipe but you just cook up the veggies and meat, put them on the wrappers, roll them up and fry or bake them. Too bad we're not neighbors, I'd invite you to lunch of salad and egg rolls today!

I've never made them but I remember my grandmother giving it a try when I was a child and they were horrible. I do work with a Filopino woman who always makes lumpia (?) when we have potlucks and they are delicious. I agree that everything that you make at home is so much better for you because you can control what goes into them as well as what you cook it in. I would love to learn how to make them

I looked up a recipe for lumpia and it sounds delicious, a lot like egg rolls! I had an inspiration last night, to use my leftover wrappers and fill them with burrito or fajita filling. That would be so yummy!

It really is not that difficult. You buy the wrappers ready-made, I can make my own but it's too time-consuming for me. You just cook the chicken or shrimp or pork,whichever you like, then add chopped up sprouts, water chestnuts and bamboo shoots with some soy sauce. Then you fry them! Maybe you'll want to try it someday when you're not so busy. When my children were small I didn't make dishes like this--it takes a bit of time, sure, but that bit could be spent with them so I waited till they were in school to begin cooking things like this!

Hey I never made my own egg role. But sometimes I get it from market. Because there are not permissions in my home for egg. Yes my mom not gives permission to make dish of an egg. Because they think it is a non vegetarian thing. But I like to eat egg. And in weak I eat this for 2-3 times in market.

Well, you must respect your mother's rules for the house and her preference for vegetarian fare. Maybe one day you'll live in your own place and can make egg rolls, they are delicious! The only eggs involved are in the wrappers themselves where you roll the ingredients into but that's enough to trouble the conscience of a vegetarian. I respect such people, they are usually very kind.
