What is Flashing?

They say that you can flash Sony Ericsson phones to make most of it. They provide some so called Patches and all to do that..
I have done that, but technically, what is exact meaning of flashing??
Is it related to some kind of processor level memory flash or something?

Flashing technically means to overwrite or re-write the phone's firmware.
