How Can I Make Effective Stolen Shots with A Cellphone Camera?

I own a SonyEricsson K618i for almost three years. But every time I attempt to take some "stolen" shots, my subject/s would turn away before my camera could even process the image. What should be my strategy?

It takes more time for the images to be processed when I switch on to burst shot mode... but thanks for the advice.^^,
