Is eating your body can be considered cannibalism because my body eats my flesh? Does that count? Or is it eating someone of your own kind that is cannibalism? If that is the case then eating yourself would not be cannibalism, right?

eheh!? Hmmm...i don't really get what "eating yourself" means. Cannibalism in any sense is simply eating human meat. As in M-E-A-T. If you eat yourself...well maybe you're a cannibal! ^_^

If thats what cannibalism means then our body are cannibals. Microscopically speaking, our body eats its own.

Yes, your body eating your own body is not cannibalism. Searched for the meaning of cannibalism. I think this is the best meaning. cannibalism - act of eating another of one's own species. If you eat another human being, that is cannibalism. If a dog eats another dog, that is also cannibalism. But if your own body eats your own body without your will, it is clear that it is not cannibalism.
