I love salmon, too. I usually poach it with lemon pepper in the water, then add more lemon pepper when it's done. It only takes 10 to 15 minutes for a single serving like that. I have baked whole salmon in foil, with just a little butter inside it and that's good, too, but then I like salmon so I'd eat it any way it came.

Salmon is a regular dish that I serve my children. It's about the only fish that they like. And there is only one way that they like it.
I just place the salmon on a baking tray, and squeeze lemon on it. Then I sprinkle it with salt and pepper and pop it in the oven to broil for a little bit. When I see that it's almost done, I cut a slice of butter and let it melt on top of the salmon while it is still in the oven.

how many minutes for broiling? do I have to cover it with foil?

I don't exactly know how many minutes. Normally I just judge it by looking at the top part. When it changes color to a fleshy-light colored tone which means it's already cooked.
And yes, I'd put a foil on top of it so that it'll cook evenly. I just take out the cover when I put in the butter.
Usually we like it when the butter burns the flesh a little bit.
Once I even topped it with chopped fried garlic on top.
...hmmm, you're making me hungry.

thank you for the idea, I made it last Friday and it was so good. I love the lemon taste with mixture of butter and pepper.I cooked it for 30 minutes at 400 degrees.

I love salmon and what I do is sprinkle it well with liquid smoke, then add parsley, lemon pepper, and garlic. Then I bake it in a 350 degree oven for about 10 minutes per inch.

Here is my favourite salmon recipe:
Ingredients:
1/1/2 lbs salmon filets, skin and bones removed,cut into 4 pieces
2 tsp fresh lemon juice
salt and pepper
Salsa
1 TBS finely chopped fresh mint
1 TBS finely chopped fresh cilantro
1 TBS finely minced scallion (or green onions)
1 tsp finely minced fresh ginger
1 medium ripe fresh tomato, seeds and excess pulp removed, diced into ¼-inch pieces
3 medium cloves garlic, pressed
2 TBS extra virgin olive oil
3TBS fresh lemon juice
salt and white pepper to taste
Method of Preparation
1.To Quick Broil salmon: Preheat broiler on high and place an all stainless steel skillet (be sure the handle is also stainless steel) or cast iron pan under the heat for about 10 minutes to get it very hot. The pan should be 5 to 7 inches from the heat source.
2.Chop garlic and let sit for 5-10 minutes to bring out its health-promoting properties.
3.Rub salmon with 2 tsp fresh lemon juice, salt and pepper. (You can Quick Broil with the skin on; it just takes a minute or two longer. The skin will peel right off after cooking.)
4.When pan is hot, use a hot pad to pull out the pan from the heat and place salmon on it, skin side down. Return to broiler. Keep in mind that it is cooking rapidly on both sides so it will be done very quickly (usually about 7 minutes for every inch of thickness). Salmon does not need to be turned. Test with a fork for doneness. It will flake easily when it is cooked. Salmon is best when it is still pink inside.
5.Mix together salsa ingredients in a bowl, and set aside. Serve on top of Quick Broiled salmon.

I like to make pasta with smoked sammon. I take 200 grams of smoked salmon and cut it into small pieces. Then I Sauté the salmon pieces in some butter for a couple of minutes while I put some water to boil in a large pot. After the salmon has been sautéd for a couple of minutes I add just a little cognac or brandy. Let cook for another couple of minutes. Then I add some cooking cream to the salmon, still keeping the mixture over a low flame. When the water in the pot for pasta comes to a boil, add the pasta and cook about 10 minutes. I usually cook penne. Drain the pasta and then pour the drained pasta into the pan with the salmon and cream and mix it all together.

I have not tried it with oyster sauce but it is really very good idea, but one thing I am not a regular cook and only few times I have tried to cook, I think I can try for this to see how good I am in cooking.

try it, it is so easy. Just spread both sides of salmon with mayo and oyster sauce. You can sprinkle garlic salt and pepper for additional flavor.
