I want to do that thing where you pipe gunache into the center of a cupcake. However...what does gunache taste like? I have a recipe that calls for chocolate and heavy cream...is it a pudding style taste? Also "heavy cream"..in the store the closest I saw was "heavy whipping cream"...is that the same thing? It was expensive...$3 for 6 oz so I want to make sure it tastes good before I splurge. I hear on the Cupcake War and other baking shows that they use gaunache for cupcakes and also a filling between cakes. What's it taste like? Anyone ever made it before?

Ganache is a mixture of chocolate and cream. It can be made in various consistencies, either soft (so that it can be piped or spread as a frosting when cool) or harder so that it is spread or piped whilst warm and solidifies on cooling. It is often used as a filling for soft-centred chocolates, especially the Belgian style chocolates. It is not difficult to make, though you do need a double saucepan or a mixing bowl over a pan of hot water. Here is a detailed, step-by-step description on how to make it. I liked the bit at the end about the meaning of the word! http://www.culinate.com/mix/dinner_guest/making_ganache

Good article...but what does Ganache taste like if it is just chocolate and cream? I have never tasted cream so I guess that is my concern. I will be piping it into the center of cupcakes and they cupcakes are for kids so it has to be "tastey" enough for the kids! I am anxious to try this!

I can almost guarantee that the kids will love it! It is very rich. If you knew the taste of cream, you would not recognise it in a ganache. The experience is of a rich, soft chocolate that melts in the mouth. (I cannot believe that there is anyone who has never tasted cream!)

I have eaten ganache but never made it because personally I prefer the fluffier butter cream frosting. I don't think that ganache tastes like pudding. It is more like a glaze. It is very good on napoleons. I am sure they do mean heavy whipping cream when they say "heavy cream" and some of the dollar stores carry it in the 1/2 pint size. Whipping cream freezes well, so if you see it on sale in the quart size that is a good way to save money. If you whip cream too much it turns into butter.

Thanks. Time got away from me and I didn't get back to the store to get the whipping cream...so I just piped in butter cream frosting into the enter of the cupcakes...red and white with the white in the middle. Looked really nice! I'll try the ganache some other time I guess!
