Why does cheddar cheese become greasy after melted?

Hi, I debated trying to figure out where to put this in - cooking or questions, but since I'm not asking cooking-related question, I'll put it here.
Actually I found this really, really annoying, lol, because cheddar is my favourite kind of cheese, but why does it get so greasy after it's been melted and stays greasy after it cools down? I mean it doesn't happen to Parmasean or mozzerella or montery jack, but why cheddar...I don't get this.
I'm actually curious, if anyone who knows food chemistry can tell me, that'll e great :-p

You might check to make sure it is real cheddar cheese. Some of the fake stuff adds some oils in and some are even made of oil instead of milk products. I would check the ingredients first!

In fact, I've used cheap Mozzerella cheese and it doesn't turn out to be greasy, and also the cheapest Parmasean cheese as I can find, it comes out okay as well.

Wow, that's crazy, does it do it if you grate it first and then let it set awhile before using it?

The cheese on professionally made pizza is very greasy. All cheese contains fat, but the more fat, the greasier it will be when melted, as melted fat is greasy! Like the skin on a roast chicken.

It is extremely hard to find a professional pizza shop that doesn't sell non-greasy pizza, that's one reason why we make our own.
