Shall I throw away my green tomatos?

I thought I would have to post something like this in 2 more months (we are in Summer and my tomatos are just starting to rippen) but yesterday, dumb me, I took a few green ones from the plants with the hose. So there they are, green but inviting, and I don´t want to throw them away. I have only eaten red ripe tomatos but I think that in other parts of the world they also eat them green. I don´t want to throw them as they are my flesh and blood from my raised beds, so...
Please tell me what to do with them! Share!

My mother-in-law (who is no longer here to give me the recipe) used green tomatoes for making jam and it was delicious!
I also use them together with red and yellow peppers and white onions to make 'pepperonata' which I then use both as a sauce for pasta or as a vegetable with meat or fish.
Don't throw them away as I am sure you will get other suggestions too!

Hi di,
I tore them away from the plant one day ago and I did not have the heart to throw them away. I make a pepperonata throwing peppers in hot olive oil with a clove of garlic. Sometimes I add some fresh mushrooms. How do you do it? The addition of my baby tomatoes sounds great.

I don't follow the 'proper' recipe
I just slice the onions and let them colour in olive oil and then add the diced peppers and tomatoes. Sometimes I vary it by adding red tomatoes and even a diced potato too. I make it with whatever vegetables I happen to have here that need using up.

That´s my idea of a recipe Di! I get the idea and my tomatoes will not be wasted. I happen to have a lonely zuchinni from my veggie plot so I´ll make the sauce and pour it over the steamed zuchinni (al dente) I have my lunch! I have some leftover cooked chicken from yesterday so I´ll even have the right amount of proteins. Thanks, luv.

Hello Marguicha, here we make pickle with green tomatoes. In the autumn when the sun is not so hard, when the weather is not so warm, it's impossible for tomatoes to go red. So my mother gathers the green tomatoes, she makes them with salt and vinegar and close them in jars. If you want exact recipe, i can write you in pm.

Yes it is really wonderful, we can share so many ideas together, i love it here.
I sent you the recipe in pm, i can find some others if you don't like that one. My mother is doing some different kinds, others than that i sent you, others are with sugar in. You can mix the green tomatoes with carrots or something like pepper, but it's shape is circle, i'll put a picture with this post. That jar i made picture on is without green tomatoes, because it has sugar in and it's only green pepper cut on parts, carrots and cauliflower.
We eat it with potatoes or rice, white beans or potatoes with green beans, but not mixed together. It's in different plate and every kind of dish which is possible to be eaten with pickle will be good with the tomatoes.

Unless you want to try fried green tomatoes, you can just take the green ones and place them on a window sill that collects a lot of light. The light will cause them to turn red. It takes longer than it does on the vine, but it works. Now if you want to try them fried. Just slice them up, roll them in seasoned flour and fry. You can also bake them instead of frying so it will be healthier.

I like fried eggplants but I make them ripe and with no batter. I just cut them in rounds and fry them in olive oil.

NO! DO NOT throw those away! I live in the southern United States, and green tomatoes are considered by some to be a delicacy here. People fry them and serve them up as an appetizer or a side-dish. All you have to do is get online and search for a recipe for fried green tomatoes, then just follow the recipe. I have had them, and they are delicious. Just typing this response to your discussion is making want some of them right now LOL. Good luck and let me know how it turns out if you decide to try it.

Many people here have given me ways of eating them green. I knew that could be done but in my country we only eat them red. I´m glad I learn so much from different cultures here.

Hello margucha. Accidently picking tomatoes that are not ripe can happen to any one. You can put them in the window and they will ripen. But I would fry them. Slice them about 1/4 of an inch thick dip or dredge them in a beaten egg then in flour or corn meal put them into a heavy skillet with oil. brown on each side and serve. These are so good and a good way to use green tomatoes. Fried green tomatoes are popular in the south east of the United States.

I know certain people make dishes out of green tomatoes but I don't know any. I had a neighbour who would make chutney out of those and it was yum :)
Usually when my husband does the grocery shopping, he doesn't get tomatoes which are ripe enough for me. If I keep it in a dark and warm place, they ripen quickly. You might try that if you don't get any recipes that you like.

I will do green tomato chutney in the Fall. But these were just a couple that fell off the plants. I followed my friend´s advices here and made a couple of nice dishes with them. I took picture to show them. Sroll up.

hi marguicha oh do fry them, slice them thin and season and fry as
they are truly delicious. A lso on of my favorite books is called
Fried Green Tomatoes and its hilarious as well as a old best seller.
But really do fry them as they are really great to eat. very tasty
'and good for you too. I am really a tomato lover ripe or green,
in salads even in tomato sauces. lol lol

I love red tomatoes, specially homegrown as I will get them ripe from the plant. But in my country we don´t eat green tomatoes. I posted this remembering the book and I got so many answers that I will not lose any one of my wonderful crop

here in USA, we dip them in flour, then fry them . that is some people do. they have a distintive flavor. my mom loved them and some people really do love them. but ive never been particularly fond of them. i can take them or leave them

I wiill have to try them. I have been reading books and I have grown curious about some recipes from the south of the US. Some date back when the French were there. It´s so much fun to trace the genealogy of some traditional dishes.

They are still useable. You can make some fried green tomatoes - do them just like squash! Or make some chow chow. Yo can even throw them in soups but not too many at one time - it might be bitter but it shouldn't be!

What is chow chow? I checked fried green tomatoes and they look beautiful. I hope they are as good as they look. I have only eaten ripe tomatoes until now.

Here in our country we eat raw tomatoes either ripe or not and it tastes nice.
I love green and ripe tomato with onions,black sauce and lemon as dippings with fried fish and grilled meat.

Black sauce is almost same with soy sauce but a bit thicker in concentration and a little bit sweeter than soy sauce.
It's one variety of sauce...check it from the grocery dear ,i am sure it's in your place.

Hiya margi,
Could you not just let them ripen in the Sun? Or take them in the House and put them near to a Window to ripen there. That way you would surely be able to eat them. Or are they so green that they still needed more time to mature on the stem they came off?
Never mind if that is so I would use them as some kind of compost. I don´t really know any other thing what I would do. You are a great Gardner Margi not like me. I can cut the Grass and the Hedges and all that. But all that growing plants stuff escapes me.

Hi friend,
I have had a couple of wonderful I deas that I have put to work. My friends in the south od the US told me about bried green tomatoes. I made them and they are delicious. Msdianait went farther and sent me a pepperonata that included the green tomatoes, pimientos and all the other yummy things. I made the dish and took a picture to post here.
I´ll post the picture again so you can see it. I placed the pepperonata over a steamed zuchinni.

I always buy my tomatoes when they are green. They will ripen on the counter. I use yellow tomatoes in salads. If the tomatoes are really red, I will use them for sauce.

I have tomatoes just the right ripeness now because I´m growing thwm in the backyard. These are a couple that fell off the plants and I don´t want to throw them away. Many people here gave me recipes for green tomatoes. I´ll give it a try.

Another great dish to share with your family for green tomatoes is fried. :)
Slice the tomato up, give it a good egg wash, then bread them a little toss them in a frying pan with a little bacon grease or even butter. They are great!
You can add salt and pepper to taste.
Now if you still want to enjoy them nice and red a trick to help them ripen would be to put them into a brown bag for a few days. I've heard that does the trick.

Fried green tomatoes are really good. Just slice them, dip them in beaten egg, dredge in flower, bread crumbs or corn meal and fry them in butter. I pick green ones off the vine to do that all the time. The really green ones are quite tangy but you can let them sit a few days and wait until they start to ripen just a bit and I think they are better. You could also pick a few more and make a green tomato pie. That's one of my favorites. Just do a search on the web and you'll find a bunch of good recipes.

You can keep them in some warm place, or if you have greenery, you can keep them for while, they might be ripen after some time, I don't know if it work or not. But I hope that you can find an alternative way to make them edible.

I ate both tomatos with recipes that my friends gave me here and nothing happened. I´m still alive and in good helth and found both recipes delicious. I am not sad for all the green tomatos I threw away in the past.

I make jam with red ones but as this is the first time in decades that I have planted tomatoes it is also the first time I have green ones. Please, what is your recipe for green tomato jam? Is it just tomato and sugar or you have to boil them first?
