the high taste of france food

Many people say the french food have a high taste. Not surprisingly, many people pursue, hunt, and meet the French restaurant, although expensive. Which ever I heard, once eat at French restaurant, could spend money one month your salary.
Many are saying too, the french food has a high taste because have fine quality. But, actually they really do not know about what they ate. For example:
"filet mignon" (literally means: slices of tender)
"pate de fois gras" (liver paste)
"chevalen" (horse meat)
"Monsieur de Veau" (young beef, veal)
"Escargot d'France" (snails, slugs)
For the latter of which I mentioned, if they knew, might they will think twice to eating it

Have never tasted friend, no chance too, because my city does not have any hotel that serves french food, i have tasted and love eating chinese food though..

I really want to taste French cuisines since I love to try many foods in the world. I love culinary traveling and I am planning to do it. Unfortunately we couldn't find that cuisine in my country. :(

in reality when i was in france i never understood all these issues about french typical food or taste...i think in general i don't understand this kind of dishes...too much little sauces around almost all..in my opinion ..
