What's your favorite Filipino Food?

The Filipino cuisine is very diverse mainly due to the various influences from the Americans, the Spanish, the Chinese and the Japanese. I have a lot of favorite filipino dishes as well but i'll just name a few of them. Chicken adobo, Caldereta, Beef Stew, Kare-Kare, Filipino-style Barbecue, Bicol Express and a lot more! LOL. What can I say? I'm an eater! Hehe...
