Nuts, Berries, Root veggies, onions, garlic, mushrooms, fiddle heads, grapes, fish, rabbit depending on the time of year (have to wait till after the first frost) birds, deer, possum (ew)
squirrel, turtle, snake, pert near anything I spose.

I eat lots of wild food anyway without it being a survival situation. Waiting until a survival situation to do something can put lots of stress on people and they can miss opportunities. Depends on the time of the year. In winter, there are fewer animals out and about.
But cat tails usually have some part of them available to eat all year round. Their nickname is supermarket of the swamp. A friend of mine went to live off the land in mid winter and chopped through a pond to get cat tail roots.
Time of year plays a big part in anything.
