when you have leftovers, no time and hunger.
I have had to go out a lot these weeks and come home hungry and warm. Summer is at it´s worst and you only want a shower and something light for lunch.
This is where my odds and ends at the fridge come handy. Today I had some leftover diced onion, four fresh mushrooms, a bit of ham, a bit of cheese and three tablespoons of fried rice. That, with 2 eggs to make the omelette, turned into a wonderful omelette. The meal was balanced: eggs, cheese and ham for proteins; rice for carbos, fats and some veggies.
Do you make omelettes for a quick lunch or dinner? I make them with just about anything!

MMM, marguicha, this sounds wonderful. It is quite similar to what I like to do especially if I have some left over white rice. I have also done the same for a sort of brunch deal where as I have made the omelet and put it between french bread, with a couple of avocados.
Now I am getting hungry.

I usually make a big salad to go along with the omelette, specially now that it´s Summer and I love cold dishes. My homegrown tomatoes are just right for an omelette.

Wow rberon did not realize our huge time difference as it is only 7:39pm Wednesday here. So I about an hour ago just finished with my dinner. I so love fruit for breakfast after I have my morning coffee. I especially enjoy mango, more so then any other fruit. I actually find it very refreshing in the mornings also.

Sounds wonderful! I don´t "order" anything, it´s way too expensive for me. I live frugally and only spend in traveling.

You are lucky! Even though I love to cook, sometimes I´d love to have someone bring me something good on a tray

I currently live with my friend to put up a business in one of the provinces here in the Philippines. Lucky for me, they own a hotel here. That is where we live for the time being. So everything is free. That is why I said the word order...hahaha...

I love making omelettes. You're right about them being a great way to get a balanced meal and they're so easy to make. Also, a great way to use up small amounts of things in our fridge!

As I live alone, I don´t throw away little bits of food. With them I can even make an omelette for 2, if someone comes along.

A good lunch for me in Summer can be an omelette (2 eggs, some rice, chives, cheese, parsil, fried onion, mushrooms) with a big green salads with a dressing of oil, salt and pepper. As dessert I eat a fruit and/or real fruit juice. I think it os enough for me. In Winter I eat warmer dishes such as legumes and casseroles or soupy stews.

As my breakfast is usually just one or two cups of coffee, I am hungry at lunch time. Now that we are in Summer in my country, an omelette with a big salad is a wonderful lunch.

My husband sometimes tease me that I look like an egg because egg is always comes in handy evrytime I'm hungry or lazy to cook or even tired and not able to cook difficult recipes.

I use a teflon pan and always the newest one I have. I preheat oil at medium, beat the eggs with a fork and add whatever else you want. I turn it over (one half over the other) with a big utensil (I´ll take a picture later and send it). Don´t put too many aditions: the omelette has to be primary eggs. I hope it works.

That sounds great! I don't eat eggs much, but I guess if you put a lot of other things with them they can be ok. I have never made them myself, but I do like eating them when I eat out sometimes. Have a great weekend!!!

Hi Deb,
I love omelettes, but I cannot eat them at all right now. I guess I´ll have to forget yummy things to eat for a while. All the time I was in bed, I saw channels where they prepared wonderful food. I´m on a strict diet for the time being. I went down almost 4 kilos in a week. I hope omelettes will be part of my diet in a month or so.

Yes I agree! Omelet to me also is a perfect meal. I do cook it mostly for breakfast. It goes well with either rice or bread. What I love about omelet is it is so easy to do. Just when you are in a hurry to prepare something to eat that could fill and satisfy, omelet is the best option. You just have to beat an egg then cook in olive oil or butter whichever you prefer then fold in around any filling whether it be meat, fish or chicken flakes or veggies. In a minute the omelet is ready for eating. You can add some ketchup to make it more flavorful.

Soy sauce? Well I think I'd try that too for a difference. I love soy sauce in fried fish and I think it's a good idea to put it in omelet too. Thanks for that tip! And do enjoy your day!

You posted a wonderful picture. I don´t like my omelettes with ketchup, but I do put a bit of soy sauce for a different flavour.

Hiya margi,
Sometimes I will do an omelette with a Soup and a Salad for Supper or even Dinner if they push me hard enough.
Spanish Omelette is their favourite though but it does not go down well with one this weekend as he is having those covers on his teeth all replaced and is in a very grumpy mood as well. Cannot smoke, have foods that stain and how does he think I feel. I just suggested to get a huge baby bottle and strain all the food mix with a Food mixer and feed him with the huge Baby Bottle that way nothing would get stained would it. You´ve got it right no sense of humour. (grin).

I always use omelettes as a way of eating leftovers in another way. I´d say they could be called stuffed omelettes. I have them at lunch or even diner as I have never had those big breakfasts (only coffee, bread and butterand/or jam and that´s all). No snacks either. They did not exist in my time in my country. We ate four meals (light breakfast, big lunch, tea and a late diner). Things are changing here though with the acceptance of other customs.

Asparagus would be the king of omelettes, I suppose. They are expensive here so I don´t eat them much except when in full season. YUMMY!!!

When I started to learn how to cook, I started to do some easy meal planning too.
When I had meat, I just boiled frozen veggies and made a sauce with bought mayo and maybe dry oregano and a bit of vinegar for the homey taste.

Beat the eggs, add salt and pepper and whatever you like and have at hand(the fridge is a good place to look) and stir. Heat a pan on medium and let eggs set. Use a wide spoon to put half of the omelette over the other half. I it breks up it will not be beautiful but still yummy!

An omelette can make a good meal very fast. Yours is quite complicated for me. I make easy omelettes with sorrel or grated cheese ; in summer and autumn I make omelettes with ceps.
I add cream in all my omelettes.
I read that Napoleon -- OK, he was not a great gastronome --, enjoyed to make himself its own omelettes .

Omelettes are easy to make and their flavour changes depending on the extra ingredients you use. I use whatever I have in the fridge.
