What is your specialty dish?

Since you love coooking,there would always be a specific dish that you can perfect or good at. So I'm asking what type of dish is your specialty?
In my case, Lasagna is the dish. It may sound simple but I make special lasagna and I make it only in special occasions.

'My' dishes change, because im always learning new things in my catering lessons, and then i have to practice alot for exams! At the moment im doing Middle Eastern (Lebanese) food, so i do baked fish with this tahini paste sauce. And then i also did lebanese kofta meatballs. Last year in the summer i made alot of cheesecakes and stuffed peppers. And im ALWAYS making lemon meringue pie, i just love it!

wow good for you. For now though, I don't have the luxury of time to go to a cooking school since I have a full time work.
Kofta Balls, are those the one you eat with pita bread? is it okay to share on how you make them?

My specialty dish is soufflé. A lot of my friends challenge me to make it at their houses for dinner parties with ingredients their guests bring to add to it (I never know what it will be beforehand). Fun!
