Ginger is a slow growing plant. The edible parts are the 'roots', the stems and the leaves, though the 'roots' are not really roots but rhizomes - a swollen underground stem which is used to store the food for the next growing season. Ginger needs the following growing conditions: * A rich, free draining soil. Try mixing half and half good potting compost and horticultural sand. * A temperature of between 75 - 85 degF to encourage sprouting * Always more than at least 50 degF * The soil must never dry out but be kept just moist * Ginger needs plenty of light but does not like full sun You can buy root ginger from the greengrocer or market but make sure it looks fresh and preferably has some buds on it. Some recommend soaking in warm water for 24 hours but this is not necessary. Ginger should be kept moist (but not saturated) while growing in the summer and fairly dry during its resting period in the winter.
