ok, i a, new to cooking. i don't really know alot about what people do with coconut milk either...i just kinda bought it on impulse because it looked good lol. (i tend to do that alot with groceries, since my grocery budget is pretty high and i can kinda just get whatever i want...) anyway, i am the only one who will drink any of it and i don't want it to go to waste because i doubt i can drink it all by myself (because it isw so high in saturated fat). so i would like to know what i can make out of coconut milk...

Hi, You can cook some delicious and spicy, Indian style Fish curry and also chicken curry. Coconut milk can really improve the taste and make these dishes more delicious. 1. PRAWN CURRY Ingredients: 1 kg prawns, cleaned, shelled and de-veined 1 1/2? lump of tamarind 1/2 cup hot water 1 large onion sliced 1 large tomato sliced 7-8 dry red chillies 2 tbsp garlic paste 1 tbsp ginger paste 1 1/2 cups coconut milk 2 tbsp coriander powder 2 tbsp cumin powder 1/2 tsp turmeric powder 1/2 tsp red chilli powder 2 green chillies slit 2 tbsp cooking oil Hot water for gravy (approximately 2 cups) Salt to taste Method of Preparation: 1. Soak the tamarind in 1/2 a cup of hot water for 10 minutes. Now mash the tamarind with your fingers to mix it well into the water. Strain through a sieve to extract all the pulp. Keep pulp aside. 2. Put the onion, tomato, coconut, ginger, garlic, dry red chillies, all the spices and the tamarind pureé into your food processor and grind well to make a smooth paste (masala). 3. Heat a deep pan on a medium flame, add the oil and heat. Add the green chillies, masala paste you just ground to the oil and fry for 5 minutes. 4. Now add the 2 cups of water (add more water if you would like more gravy) and bring the gravy to a boil. Reduce the flame to a simmer and cook for 10 minutes. Add salt to taste. 5. Gently add prawns to the gravy and cook for 10 more minutes. Do not cover the pan at any time during the cooking. 6. Turn off the fire and serve immediately with plain boiled rice. CHICKEN CURRY Ingredients: 8 medium sized pieces (about 800 grams) of chicken 1 cup coconut milk 4 onions chopped 1 teaspoon(s) red chilli powder ½ teaspoon(s) turmeric powder 2 teaspoon(s) hot spice mix (garam masala) powder 8 green chillies chopped 2 tablespoon(s) each of ginger and garlic pastes 2 tablespoon(s) oil salt to taste finely chopped coriander leaves for garnishing Method of preparation: 1.Grind half of the green chillies to a paste and mix it well with the ginger and garlic pastes. Make cuts on the chicken pieces, rub this mixture on to them well and marinate for about an hour at least. 2.Roast coconut shavings in a little hot oil till light brown. Cool and grind along with half the onions to a paste. 3.Heat oil in a heavy-bottomed pan and saute the onions on medium level for about 2 minutes or till they are light brown in color. 4.Add the remaining chopped green chillies, spice powders and fry for a few seconds. Add the marinated chicken pieces and fry on medium level for about 3 minutes or till they are lightly browned. 5.Add the paste, salt and mix well. Add water according to the desired level of consistency and bring to a boil. Cover and cook on low level for about 25 minute(s) or till the chicken pieces are tender and fully cooked. 6.Garnish with finely chopped coriander leaves.

Sorry a correction: for Chicken Curry, refer Method of Preparation, point No.2, The correction is: 2. Add half of the onions to the coconut milk and grind into paste.

I would try it instead of regular milk in puddings, cakes, and cookies...maybe over hot cereal...I don't know what it tastes like, but you could experiment with macaroni and cheese and mashed potatoes, etc. Maybe change the cheese to balance out the flavor...Use your imagination.

i hate regular milk too. i usually use soy milk but i branched out with the coconut milkq

Hi, Coconut milk is one of the ingredient needed that can be used in cooking and making cake or making jellies. FOr me, I like to eat spicy food and definitely I need coconut milk to cook my curry or rendang chicken. If you like to eat dessert, you may need coconut milk for certain dessert like bubur cha-cha,glutinous rice porridge,etc...lots more local desserts which may need coconut milk as their ingredient. Of course, you can't drink coconut milk by itself,but use them in your cooking. Buy some agar agar powder and you can always mix coconut milk while cooking the agar agar,it does taste nice after chilling the agar agar in the fridge for few hours.

wow people come on here giving me the most exotic sounding ideas...i don't even know where i could find agar..in fact, i didnt even know you could eat that. i only knew you could use it in petri dishes to grow microorganisms

I use coconut milk for my dishes like chicken or pork curry, chicken pastel, soups and sauted vegetables like string beans and squash. It makes the sauce creamy and yummy. You can also use coconut milk in desserts and snacks. It is also a good skin softener, just scrub it in your skin and leave for about 15 minutes and do your normal shower. It is also good for your hair, use it just like hot oil and shampoo and rinse afterwards.

I make chicken coconut soup and my family goes crazy for it. Start with chicken stock and then marinate the chicken in coconut milk, then add chicken, coconut milk curry to the soup. Throw in a few fresh vegetables and there you have it!

Coconut milk makes me think of Curry, thickening the sauces in stew meat which added some unique taste for main dish. For drink, I love to mix coconut milk with avocado which is pretty fattening and rich.... but I just can't simply resist. For desert.... I will pour some of the coconut milk on tapioca.... yum...

yeah i usually think of more tropical sounding dishes like curry too. i never thought to mix coconut milk with avacodo, but it sounds interesting. i have got to try that. and i also would've never thought of putting coconut milk on tapioca...thanks :)

are you referring to the coconut milk or coconut juice. coconut juice i think is the water like content of the coconut. while the coconut milk is the liquid extract we get from the coconut meat. i like using coconut milk or cream in chicken curry and other curry ingredients.

Hi birdie, coconut milk can be used for making pan cakes. You can mix in the flour and egg to it and make pan cakes. It is very tasty. One can also use it to make gravy.Just fry some onions and green chillies also add some curry powder, chilly powder , salt pepper and tomatoes. Once the tomatoes are soft and cooked add the coconut milk and boil it. You can add boiled or sauted vegetables or even chicken in this gravy...

when we need coconut milk, we make it at home by manually grating the coconut and squeezing its juice. i like cooking with coconut milk, to make my dishes creamy but i never tried to drink it fresh.

I read somwhere coconut milk is a health bringer. It is very good for recovering your body after when you are doing hard intensive physical training. I have not used coconut milk in cook. But I am pretty sure you can cook good dishes it.

well you would think that people would actually encourage you not to drink it because it is so high in saturated fat...but anyway, that is something i will look into finding out more about (the health benefits of coconut milk)

coconut milk...hmnnn...i think of something else, lol:P But seriously, its one of my favorite ingredients every time I cook for some occasion. You can make this as a topping for rice cakes (yummy:P)...or simply add it to any fruit shakes or juices, a nice alternative for milk:)

cool. that is the other reason that i bought it. i wanted to substitute it for dairy milk. i have been drinking soymilk since i dont know when...anywho, i wish i had a blender right about now...i want to make a smoothie with coconut milk

you know the best dish we eat here in the philippines that has coconut milk? crabs in coconut milk. they could easily be cooked with a simple saute of garlic, onions, and ginger. then you could add the crabs. you may season it with whatever you prefer. we do it here with just salt and pepper. you could also add in some veggies of your preference, but the best i've eaten so far is with squash and leafy veggies like chinese cabbage.. you could also make ice cream from coconut milk. =)

omg....all these recipes are severely making me hungry (even though i just finished dinner about twenty minutes ago lol). anyway i would have to go out and buy extra supplies to make those dishes unfortunatley...but i really do wanna try them

Well birdie, as everyone said coconut milk is very good for your health (limited usage) and makes your food taste very good. You can also use coconut milk for hair growth, and its good for your skin and face but as it used predominantly for cooking purposes you can try making some thick curry's and sweets. You get lots of recipes on the web. Happy cooking..

well i guess that makes sense (the limited usage part). and also i am a bit confused about the hair growth thing...are you supposed to directly put it in your hair? and on your skin?...it kinda seems like it would make people break out bbecause of all the fat in it

Hi. birdie816. This kind of milk sounds yummy. I have never used it before. I would think that coconut milk can be used in cakes and in pies. That is my assumption on it. I think that you can also use coconut milk in cookies too. This would make coconut cookies.

Hi birdie. There is one recipe which can be prepared using coconut milk apart from what all the others have written. It is coconut milk rice. You have to use basmati rice for that. I don't know if I can type out the recipe here. But will do it anyway. Basmati rice - 1 cup Cinamon stick - 1 inch cloves - 2 or 3 medium sized onions cut length wise - 1 Ginger - 1 inch and garlic cloves - 3 (grind both to a paste) Bay leaves - 1(optional) Fennel seeds - just a few Green chillies split - two(or if it is too hot for you, just add one) Salt - to taste sunflower oil - 1 or 2 tablespoons coconut milk - 3/4 cup(add water to make a total of 1 3/4 cups of diluted coconut milk) Wash the basmati rice gently. Make sure that you don't break the rice. Heat oil in a small pressure pan and add fennel seeds, bay leaf, cinamon stick, cloves and after one minute, add the chopped onions, green chillies and saute for about a minute or so. Then add the ginger garlic paste and stir for another 5 to 10 seconds. Then add the diluted coconut milk in the pan, add salt and taste. Then add the basmati rice and cover the lid with the weight and let there be one whistle. This actually depends on the type of basmati rice you get there. Just make sure the rice is cooked. Other wise, you might have to sprinkle some more water and keep it for another one or two whistles. There will be instructions on the back of the cover when you buy the rice. Please make sure to read them and add water accordingly. This is a very tasty dish and can be served along with onions chopped very small marinated in curd or yoghurt and salt. Or you can even use carrots and cucumber in the curd instead of onions. Hope this was easy for you to understand. I would be happy to help with any doubts whatsoever. Happy cooking.

Are you talking about the coconut milk, the white one extracted from the flesh of a grown up coconut? If that is what you are talking about, well we don't drink it as it is here in our place. We use it in cooking with a bit of spicy chili. We put it in almost all the vegetable we cook and it could make a dish delicious. Here in our place we are fond of cooking with coconut milk. We would cook chicken with coconut milk and a little curry on it.

Aside from drinking it fresh, you could cook the coconut milk. You can put it in fish or meat. Your dish becomes more savory when cooked with this.
