egg rolls

So I have been making egg rolls for my kids as they are a favorite of everyone, but I cannot seem to get the filling right. I came close with some left over chicken and coleslaw mix but I think I put in the wrong spices. Does anyone else make their own egg rolls and have some tips for me?

I use alittle ginger, sea salt/sugar if you need it. Pork is great and mushroom, cabbage, carrots, celery and water chestnuts or even some spinach. All or a mix of these and sautee them in soysauce, corn starch and alittle water. Here's a great recipe and shows the entire process. The thing you make is called "spring rolls" here. You can add the sliced bacon, raddish, pepper etc inside. Usually I just put the peanut jam with sliced coconut and sugar for the egg rolls. The filling I use are usually contains shrimp, cabbage, and mushroom very simple and tasty.
