Do you make food in advance?

Sugo alla puttanesca - My sauce is slowly simmering while Iñm here, at mylot. I decided to use the thick presure cooker so that I could post without the fear of it burning.

I like to cook in advance at least part of the food at weekends or when I know that I´m going to have visitors. On weekends anything can happen. Sometimes noone comes, sometimes everyone decides to drop in. Even though they all bring food and help, I like to have a main diash so that we all are eating the ame thing. This evening I started to clean up my fridge and discovered many interesting ingredients, enough to make a big batch of sugo alla puttanesca. Wonderful, as everyone loves pasta. If tomorroe or Sunday noone comes, I´ll freeze it and save it for a rainy day. Do you have your food hoardings for occations? Do you like to cook some things beforehanded so you are not so tired when company comes? Share!

I cook ahead whenever possible. For holidays, I usually plan side dishes and vegetables that can be prepared ahead and reheated at dinner time, that way the only think I have to worry about is the main course. In the summer, when it's hot out, I frequently cook dinner in the morning while the house is cool. The we just microwave our meals when we're ready to eat. We frequently don't have hot meals in the summer, but when we do it's nice to enjoy them without heating up the house. I have a picky family, who aren't keen on leftovers. What I do it freeze everything remaining, no matter how little or much. Then when I have a good variety in the freezer, we have a 'buffet' night. For a family that doesn't like the leftovers the next day, everyone likes those nights.

My husband won't eat spinach, which I love. When I make soups, I chop it very fine, and he thinks the soups are wonderful. Guess it just goes to show that sometimes we don't like foods because of appearance or texture, more than flavor. Good idea about the omelettes. Sometimes I make 'garbage scrambled eggs' with leftovers, but omelettes are a bit more elegant. Will have to try that!

I rarely have visitors and if they come it's for a few days. I have to be organised because I can't go to the shops any old time. I tend to cook from scratch with each new day. Living alone though, I often make a dish and serve it into portions and eat one that night and freeze the rest. Saves me having to cook at a later date. I'll be making a potato bake this week and it will go into several portions. I know you love potatoes, do you ever do a potato bake?

You thinly slice potatoes...I use regular and sweet potatoes. Layer them in a dish and add some finely chopped onion and bacon that has been lightly fried. Also add cream enough to almost cover the potatoes. You can add any herbs you like as well - I like black pepper and a small amount of coriander. You can add garlic . You can just have the potatoes plain. Place in the oven for about 35 minutes till the spuds are tender. Cover with grated cheese and bake for a further 15 minutes.

What is a potato bake, friend? Please tell me. Probably I know what it is, only my name is in Spanish. But I am curious.

I enjoy baking bread! (I've worn out 4 breadmachines) The bread on the store shelf is made with flour and water, artificial flavors, seasonings, and preservatives, which are added to prolong shelf life, and make the bread seem fresh.(Store bought bread is not a healthy food) Homemade bread is filled with the goodness of buttermilk, olive oil, honey, sea salt, and whole wheat flour. I add freshly cooked potato to prolong freshness, and make the bread more palatable.

My ister makes homemade bread at her home and whn I go there I have the pleasure of eating it. But I live alone and a loaf woulf last ages! But in my country we have nice bakeries with french breads that you buy and eat in one or two days.

It depends upon the recipe. Soups, stews, and certain casseroles are best made in advance, as their flavors meld and marry. And, of course, certain sauces can be made ahead and frozen as you have mentioned. Of course, also, cook-ahead and prep- ahead are a boon to the cook, both to relieve fatigue and allow the cook to enjoy company without "slaving over a hot stove".

You are right that it depends on the kind of ldish you are making. But there are some sauces (like the one of the picture that I made yesterday) that are easy to freeze. I just take care to put less salt because it seems that freezer makes prepared food more salty.

hi, i want to do that so i dont feel the tiredness when my visitor come to my house, but i could not because the climate here in my country is really hot and food will easily rupture or moldy even we preserve it to the refrigerator.

Most food can be kept in the refrigerator for no more than two days. But it can last a lot if you freeze it. I boil dry beans and freeze them to have them ready when I want to make a minestroni or a dry bean soup. I even keep broths and juices in the freezer and use them instead of water when I make rice.

It's my routine to cook meals in big quantities. I like to put in the freezer for coming days. It's nice when you come home in the evening to have food in the freezer ready to warm up. You can save money cooking with fresh basic groceries, which I prefer. You also know what you are eating, when you have cooked your meals yourself.

In my country, vggies bought at the farmer´s market are a lor better and usually cheaper than at the super. So I buy veggies on season and process them for the freezer. I have pesto, fava beans and pimientos all year at reasnable prices.

I sometimes do advance cooking, especially when I know that I'm gonna be busy for the week. And sometimes, I get hungry in the middle of the night. That way I don't have to cook, I just re-heat the food. It is also economical!

I save a lot in gas and use better my time with dry beans. I soak a kilo and boil them. Then I freeze them already cooked. Last weekend I had some friends for an unexpected barbecue at home. They were bringing everything but I wanted to make something. So I made a wonderful dry bean salad, with diced onion, cilantro leaves and tomato. Yummy and easy!

Hi marguicha , you must be excellent in the kitchen! My mother makes sugo alla puttanesca and it is scrumptious. My mother is an excellent cook being Italian and all. Me, I am not so good and I am lucky to get something on the table at all let alone preparing meals in advance for visitors. I have visitors coming this afternoon as a matter of fact and all I’ve done is prepared a cold meat and dip platter and I have mini quiches in the oven followed by a cream cheesecake. I didn’t make the quiches and the cheesecake, I bought them frozen so all I’ll have to do is prepare the platter, turn the oven on and take the cake out of the freezer. Done!

We all have our talents and our flaws, dear. I prefer to cook all day than to drive to the uper at peak hours for food. I´m a lousy driver. Yet I cook very well. So I make good food with little money. I make quiches with leftovers and odds and ends from my veggie garden. I made an awesome cheesecake last month but promised it would be my last. It is a bomb of calories and fat.

I live on my own at the moment so I usually cook for 2 or 3 meals at a time! I don't like to have the same every day so I freeze some and cook something else another day so eventually I tend to have a few frozen meals in my freezer. When I have people coming for lunch or dinner I usually cook in advance I even have the salad vegies all washed and cover in the fridge so assembling the salad only take a minute...I love entertaining but I don't want to be in the kitchen when every one else is having fun!

I do the same. I don´t like to eat the same thing for many day on a row. Besides, there are some food that go with a family reunion. Lasagne and all kinds of pasta are some of them. It comes handy to have pesto or a puttanesca sauce in the freezer. As for friends coming over, I also do the same. Now I´m not even putting a dressing over the salads as some of my friends have special needs (less salt, no fat, etc)

yep...we cook in advance whenever we're staying in the other apartment because there is no fridge there. so basically the only way to "preserve" fresh food is by cooking them right away after buying them from the market, and then storing them in a jar for later use. frying is an easy way of cooking , and once the meat is fried, it can be used for many local dishes. like adding fried fish to a local version of a vegetable soup... Anything goes really, just hafta be creative.

You are SO right. I´m sorry you don´t have a fridge. It is very handy when cooking and it´s a good way to save at the end because you use all leftovers. Of course it´s a mayor buy

I use to when I use to own my home. I always had so many coming and going. Now that we are in our small apartment I don't get guests like before. But one thing I do like to make and freeze is lasagna. My boyfriend absolutely loves my lasagna and since it is only the two of us, I like that from time to time to time we have our lazy days and so easy to pop it in the oven and not to cook a full meal. I have been known to make 2 full batches of lasagna and it never gets tiring around my home, my boyfriend loves to cook and eat. So I like that he will initiate the heating. lol By the way what ingredients are in your yummy looking pot? It is like a stew?

I always have sauces (not the milk based though) for pasta and rice. So that if someone comes, I just take some out of the freezer and to the microwave while I make some rice or pasta.

I do sometimes. Especially if I have to cook for a lot of people. Usually if I have to cook for more than 4 people I try to cook at least half of what I plan on making a day or so ahead of time. It really helps out a lot. That way I can use the extra time to clean up the house or prepare the decorations!
