Evening Out Wood Grain before staining

My husband is building an entertainment cabinet out of birch. The wood is beautiful, but there is quite a bit of grain which we're sure, from past experience, will result in a mottled look if we just stain it and then apply polyurethane. Does anyone know how to get an even finish like the high end commercial furniture?
