Bored With Plain Mashed Potatoes

Potatoes has always been a staple when I was growing up, so I love them even until now. But I get bored with eating them the same way over and over again, so I like to add a bit of spice to them. I usually make mashed potatoes, and that's what my family likes, but they like it with just milk and butter. Except for me and my daughter! :-D So what I do is put Italiano seasoning, black pepper, and Parasean cheese and mix it all in, oh man it's some delicious. I remember growing up my foster mother used to make the mashed potatoes, whip some sour cream and chives in them, and sprinkle cheddar cheese on top, and bake it in the oven until golden brown on top. I should make it like that again sometime, I miss that, and she made it really, really good. Lol, anything with cheese is always good anyway :-)

My dad used to mix in cream cheese and whip them up, it was really good. I have made them with chiken broth, instead of milk, that was good too. I love to experiment with potatoes.

Using the chicken broth gives them that golden color, like lots of butter, but healthier for you with not so much fat.

We like to roast garlic and mix it into the mashed potatoes. Sometimes we will mash a sweet potato or a yam and mix it in with mashed potatoes.

I agree, anything with cheese is better! lol. Sometimes when making mashed potatoes I add in chicken broth to the water to give it a more savory taste that goes through the potatoes as they are boiling.

I will definitely have to try the chicken broth idea, or even beef broth - I am known to put black pepper, oregano, and basil in with all of my veggies not only potatoes before, give it a nice flavour, for sure.

potatoes...I love it any way it's cooked...esp. mashed cheese..., my mom would say that if I have to choose between cheese and chocolate, I'd be choosing cheese, and I do love chocolate... Here in Philippines, mashed potato isn't really a staple food but we do have it regularly in my house since, except for my mother, the rest of us adores it My favorite is when cheese is added to it, but my sister likes it with butter, pepper, and a bit of salt...no cheese! my brother likes it plain and just adds it to rice and the viand, my father is like me though, so my mother has to cook three three types....

Hmmm...I don't think I've tried corned beef hash, although I do love corned beef and cabbage stew. Corned beef does have a delicious, unique flavour, as well.

Mashed potatoes can be turned into so many different things that it is a wonder. Have you tried mixing the mashed potatoes with a bit of flour, cutting a piece of cheese and covering the cheese with the potato dough resembling a real potato? Then you flour a bit more the potato or pass it through ground bread and fry it? It is absolutly delicious. And now that I read your post, maybe the potato dough could be spiced with a bit of dry oregano for the touch of classy italian

Hmm, that does sound like a lovely treat, I must try that sometime. Yes, basil, oregano, summer savoury, rosemary, any type of spices that goes good with tomatoes are really nice with potatoes as well.

Potatoes, in my opinion, are one of God's perfect foods. So, BTW, is cheese. So they are a good combination. My favorite way of eating potatoes is mashed. Plain, with butter, milk (or cream) salt and pepper will certainly do. But, I prefer them with gravy, cheese, sour cream, or any one of a myriad of toppings in different combinations. Garlic mashed potatoes are also good. Sometimes I bake potatoes, then mash and stuff them with scallions, cheddar cheese, sour cream, and parmesan cheese. Almost any variety of cheese will do. Sometimes I add veggies, like broccoli to my mash mix. I also make a mashed potato casserole with butter, milk, cream cheese, sour cream, scallions, and parmesan cheese. I know many like bacon, but I don't. I prefer bacon all by itself. There are restaurants that specialize in mashed potato bars with a variety of toppings. I've even seen weddings which incorporate that idea into their dinners.

Yes, the variety of sauces and toppings is almost endless. Tomato and barbeque sauce work, as well as good old gravy or cheese sauce. I like ranch dressing, too. Any meat, fish or seafood topping will work, as well as a plethora of veggies.

Potato bars? Now that sounds interesting, for sure, I'd love to experiment at the potato bar, hehe! I wonder what kinds of sauces are served there? I personally like a nice, thick beef gravy, but am also wondering about any tomato-based or cheese-based sauces, actually. Or a nice cheese spicey sauce...hehehe, now I'm daydreaming :-p

Hi Mashi, Sounds yummy! I remember we also used to make mashed potato during my childhood especially during the rainy days. We just season it with butter. Sometimes, I put sugar in it if I want it sweet. Thanks for sharing other ways of preparing it. My aunt just gave me a few pieces of potato. I might as well try your suggestions. And I agree with you about the cheese!

If you use the garlic press, it's a lot healthier for you, the garlic is good for healing of colds/flus and is an anti-flammation food as well. I eat raw garlic quite a bit.

How about Loaded Mashed Potatoes: Simply cut up some smoked bacon into small peices and fry until crispy, remove from the pan. In the same pan add some sliced spring onions and lightly fry until softened. Mix the bacon and spring onion into your mashed potatoes with grated cheddar cheese on a low heat and stir it all in until the cheese has melted. deeeeelicious!!!

I do not make mashed potatoes often, probably because I want to fill them up with butter and sour cream or cream cheese. I just microwave a potato for myself and then add a lot of veggies or meat, or cheese. I need to cut down on the cheese. Potatoes are a great comfort food and are not bad for you unless you put a lot of fattening stuff on them. I have seen recipes where you stir ranch dressing into them.

Ya, cheese is certainly the biggie when it comes to fat and calories, I try not to add too much cheese to anything I make, myself, but then again, I keep dipping into the shredded cheese pile.....hheheheee, yummy!

Though I'm from an Asian country, I prefer potatoes over rice and I really love mashed potatoes. KFC here adds gravy to it which I love and my mother makes the best garlic mashed potatoes, sometimes she adds a bit of rosemary and the scent just drives me wonkers while it's cooking. I will try adding cheese to it because you're absolutely right, anything with cheese is always good.:)

That's a good idea, I have Mozzeralla cheese, and that doesn't go as greasy as the Cheddar cheese, so I'll have to try that too. Thanks :-)
