Frying with Coconut Oil

I know Coconut oil is good for you, ut is it okay to fry with or does it produce trans fats like other oils?

Personally I have never heard of Coconut Oil, and not something I would think more people would want to use unless they like their food they are using it with to have a coconut flavor taste. There are a lot of issues out there with Fats associated with oils. When it comes to one I like with salads... it would be Olive oil and lemon pepper seasoning. Makes for a light good taste.

I was just saying that I am keeping away from eating coconut, and any thing that has coconut, because that very much aggravates my blood pressure. Within minutes from having any thing that has coconut in it, flesh, juice, or oil, I get so dizzy.

I would not use it for cooking with. I use only raw organic coconut oil that has not been heated as it goes a bit rancid after heating in my opinion. I would rather use a good quality olive oil for cooking, but even then only a very small amount as I do not like foods that are too oily. I feel sick if I eat too many oils.

I agree wholeheartedly & practice what I preach. Coconut oil is the only one I know of that does not convert into trans fats when heated or used for frying. It has the highest smoke-point of all oils - except some brands of engine oil, but you won't find me running on that! Its enzymes, etc are also said to be unaffected by the heat. You need to have a fair bit each day for it to make a real difference, it is more expensive, but so very worth it. It's like having a shot of adrenalin with a sustained effect - you could stay high on it all day! It is not like other oils in the ordinary sense. It doesn't add to your bad cholesterol level, but actually "eats" bad cholesterol already in your body. It is often described as being isotonic, anti-viral, anti-fungal, anti-parasitic, anti-bacterial & full of medium chain fatty acids & a whole host of other good stuff you won't find in decent quantities elsewhere. Health centres are springing up all over Europe & America using coconut oil as the only treatment for just about every illness & calamity under the sun. It really is the new "superfood"! Currently, there's a worldwide shortage of the best organic type, so hurry to stock up on it now!
