Well, in my experience, the best thing you can do is bring them down to size. If you feel like you have to be careful around someone, it means that they think they are so important that you should accommodate them. Instead, next time they snap at you, calmly and firmly tell them how you really feel.

You are right it can be contagious if we entertain the short temper. Once I get to know a person, and if reasoning and or getting them to calm down does not do it, and they are quick and short tempered I usually distance myself from them as I really do not like to get into debates. Life is tough enough without having to be in arguments all the time.

I am a short temper person myself. So when I feel the anger, I tend to walk away and try to take a deep breath. It's better to avoid anyone when the anger clouded my brain. I don't want to hurt someone, even emotionally, less likely physically. I don't like to be angry as well. It only makes me guilty afterward.

Short tempered people are really hard to deal with. It's like you only have one strike instead of three. Strike out and you're done. It's actually okay for me to deal with short tempered people, I usually can handle them but it really depends on who that is. If it's your boss, of course it's hard to deal with them especially when they're already pissed. When it comes to co-workers, colleages, strangers, anybody who's not ahead of you in terms of position, I can handle them.
