It depends on what you're using it for. In business, the most important will probably be formatting, formulae (and therefore absolute addressing), names (cell referencing with sensible names), cross-tabs and pivot tables.
Oh, and graphs. Everyone loves pretty pictures.

Formulae: stuff like "=A1+A2" or "=SUM(A1:A14)", that kind of thing.
