I don't know why but my previous discussion on this topic wasn't accepted so here I am, trying again. I'm not one for eating lemons like I would oranges or apples but I do find I'm starting to like them in my cooking, especially baking! Tonight I've made a Moist Lemon Cake that reminds me of a Whisky Lemon Drizzle Cake I made years ago. Unfortunately, I don't have that recipe anymore (my Uncle John gave it to me but he's since died) and I have no whisky anyway so I went on the hunt for a non-alcoholic version..and I think I've found it..and made it lol. It is found in the link below and I've taken a photograph of it as well, it's that impressive. The whole house smells of lemons now, it's great! http://www.telegraph.co.uk/foodanddrink/recipes/8059974/Moist-lemon-cake-recipe.html#disqus_thread

I've actually tried a Moist Lemon Cake before! It was so tasty! Any kind of baked good with lemon is sure to come out delicious! I think I've had Lemon Bars before as well from a local farmer's market here.

Lemon Bars, they sound yummy. Even the word "lemon" is a good-sounding word.

I think they were like...lemon brownies in a way. They were quite lemon-y!

Trust me..it's very good and of course, not too dry because of the lemon in it.

Can you eat other fruit such as oranges and limes? They'd work just as well in my awesome cake!

Lemons are amazing, I love making my own ice tea in the summer as that way I can put in a lot of lemon rind making it quite tart. The same goes for mixing orange, lemon, lime and grapefruit juice adding a little rind for each and topping a jug I have with water and ice it is really refreshing in summer. It does seem like a great recipe, I tend to use lemon or orange zest in my sponge cakes as it gives that little subtle lemon taste, but the recipe takes the zest of 3 lemons and juice thereof, it must have quite an intense taste and smell - I am sure it will be delicious I have to try it one of these days. Have you ever made lemon curd, I tried it once and placed it in a plain sponge cake with a simple glacé icing(lemon juice, icing sugar and a little water) it was quite nice from what I remember. I have as yet not made a lemon meringue pie, have wanted to for ages but never got around to it. There is something I do with lemons that is not food related, which is cleaning, things like wooden spoons, cutting boards, plastic and even my hands (have to moisturize after as it dries out the skin)I rub with lemons to clean them and then rinse, it gets rid of some stains on plastic cutting boards for instance.

Yummy! I find lemon a very refreshing taste but too much is obviously a tad bitter. You are doing well with this cooking lark. I often add a squeeze of lemon to curries or even plain old stir fries. It's a bit weird but actually adds a clean taste.

I've come to realise it's one amazingly versatile little fruit and I love the colour of it too, it cheers me up, strange as it may seem! You see, even the smiley looks like a lemon with sunglasses on! Someone has suggested I use limes next time and I shall as I have two festering in the fridge, dying to be used up!!

I likes to drink lime tee most of the time. Its good for our health as it fasts up the digestion. I also likes to drink the lemon juice, both with soda and non soda and also both with sugar and with salt. Its the best drink for refreshments.I always have a lemon juice when feels tired. I dont like eating lemon directly as it is bitter in taste. It is common here the lemon pickles. Happy Mylotting :-) :-)

Yummy! OMG Janey you are experimenting in the kitchen, good for you. This is really great and am glad the cake came out looking so great. Wow, hmm catering business Janey? lol Hey I love lemons on a great many things. I love to squirt it just about on almost any type of meat. On weekends I find I use a lot more lemons then I would during the week as I am the only one who cares a great deal for them. But this gave me an idea, hey why don't I try to create a yummy Lemon cake, I bet the whole house smells really nice. Thanks for the recipe.

Amazingly, I was expecting it all to go horribly wrong but it's actually the right thing to do to mix it together in one go. I haven't got a gadget to do it, I used a plastic spoon lol. By the way, I love my new digital weighing-scales..no more knocking the ingredients off onto the floor..and I also used a couple of my new weighing-out spoons. Awesome!! I hope you try the recipe. Like I said, it's not one of mine but a guy submitted it on the Telegraph website. Believe me, it tastes yummy but will taste even better tomorrow when it's nice and cold.

Lemons I would never eat like an orange because they are bitter. Cooking with them is fine, whether it be food or desert. Also, you can make fresh lemonade in the summer to cool you off. I do miss eating most fruit. I can no longer have most of it because of my diabetes. But I look for sugar free flavored drinks that have the fruit flavors I do like. Now, that cake sound delicious, wish I could taste it. Oh well, enjoy it.
