Several of the mystery shopping companies have tutorials on their sites as to what needs to be done. Some have certifications you must complete before you are allowed to go on the shops. They are not difficult as it is asking you questions of what is expected. They do provide instructions on all the sites before you can take on an assignment.
But basically you are rating customer service. They have specific questions they are looking for answers to, so you have to study the instructions thoroughly before you can complete the shop.
For instance you may pose as a apartment seeker and you will be looking for exactly what questions were asked during the apartment appointment. You will be rating the persons professionalism as well as their ability to try and sell you the rental. You will object to taking the apartment, then you have to rate on how the apartment manager tried to overcome your objection. You do not rent the place, you are simply getting customer service satisfaction opinions.
There are shops that you will have to make a purchase but they do reimburse you for it. Do read all requirements as you as the shopper also get rated. The lower the rating the less chances of getting shops. They are not difficult to do and some are really fun. I have received lots of free things from them as well. The paperwork is extensive though, but the shops themselves are quite easy.

In order for it to be worth your time you have to sign up to several at a time. There will be times not many shops will be available in your area. I am signed up with about 25 companies and from time to time add more. Good luck it is fun actually.

Mystery shopping is when someone goes to a shop and checks them out, but this is all done incognito. When you sign up to a mystery shopping company you say which areas you would like to undertake jobs in and then when jobs become available in those areas you will be sent an email asking you to login and check the details and then accept any jobs you want to do.
This is just away for companies to check that staff are fully trained, that the premises are clean and tidy and that customers are happy. You will be asked to look out for certain things and ask certain questions, which you have to provide answers to within a certain timescale.
I suggest as you say you don't know to much about it, you login in to the site that you have joined and re-read the FAQs and if you still have questions, contact them. What is the name of company you are with? I'm with three companies in the UK and have done quite a few jobs for one of them.
