Why do folks do such silly things?

This thought has been on my mind for years. I have often asked my friends, whoever they were, as the years have gone by and now I bring it to the Mylot folks..Simply, Why do vegetarians eat things that look, smell and taste like something that they are otherwise appalled at eating?..Thoughts?..Enjoy!
