Baking fresh fruit around your house.

Lately I have been baking a lot. I am not a great baker but since being laid off I've looking up new recipes and baking with the fresh wild fruit around the house. I think it is great to get food off your own land and make tasty things. I just made some blackberry pie bars yesterday and they were really good. I thought it was crazy to have the oven going in this heat but I did them early in the morning so it would be cool before the heat really got here. Am I crazy to be baking in this heat. Have you baked any fresh fruit things in this heat?

You daon´t have to stay near the oven all the time, so heat is no problem. But what I do, when I use the oven, is to take the most advantage of it and plan ahead. I have old cookie boxes (the old tin ones) and I wash them to hold the cookies). I cut up stale bread in dices to make croutons an then place them in plastic bags (they are best if first you dip them with a bit of olive oil and oregano, not too much).
Ans just incase you don´t know, you can make awesome dishes by adding fruit to the regular baked thing. I use apples, plums, berries to put over chicken, turkey and pork. Then you don´t have to use as much salt and they are juicier to serve with rice or potatoes.

I love fresh fruit too. I was just in the mood for baking. Thought it was kinda crazy in this heat. But when you have the urge you have the urge. Thanks.

I enjoy baking late night, as its a cooler time of the day. Baking saves me money and my family can eat healthy foods. I do a lot of baking when I'm not working.

We have some Summer heats of over 30º C in my country, but it is the time of the berries. I´d love to learn your blackberry pie bars recipe. I make jam with the blackberries, but I´d love to have some sort of cookies for the grandchildren when they visit. How long do they keep inside a tin?
