vegetables - does it need to cook them thoroughly or only half cooked will do?

good day dear fellow mylotters,
i am quite confused on what to follow now, before, whenever i cooked food especially vegetables, i always see to it that the food was not overcooked. as the vegetables nutrients will diminish if it is overcooked.
however, somebody told me to make sure that the vegetables are really cooked as this will somehow cause a bad effect to the stomach. as the digestion process will be difficult if the vegetable are not cooked well.
and now, i am quite confused on how to cooked vegetables - is it really required to cook them thoroughly or is it alright to cook them slightly as it like cooking them on half cooked?

Heat destroys the nutritious content of the vegetables so it is better to have them half cooked. Just chew the veggies well to avoid constipation. AS for me I prefer eating raw veggies because this assures me that none of the nutrients are lost. Every day I have a veggie salad on my fridge so I could have some bite whenever I feel hungry.

It depends on what kind of vegetables are you cooking. Ideally, it should be half cooked to let some nutrients intact. But there are vegetables that are hard to chew and digest they should be cooked thoroughly. Also, there are vegetables that sometimes you suspect of harboring microorganisms that can threaten your health, you cook them thoroughly to ensure they are safe to eat.

I often cook them only half cooked. I think vegetables will be more delicious with this way. And It's not influence to our stomach.

Hi airasheila, it really depends upon the veggies. Some veggies can be cooked halfway and eaten without any problems while some veggies should be thoroughly cooked in order to be digested well. Just remember one rule, the veggies that can be eaten raw, such as cabbage, carrots, tomatoes etc. can be eaten half cooked. The veggies such as potatoes etc. which cannot be eaten raw need to be cooked well enough so that the complex carbohydrates in them are broken and can be digested. If not cooked properly they can lead to indigestion problems.

We don't cook our vegetables, we steam them in a special steamer over a pot of water. This way they are a little cooked, still crunchy, and they hold in all of their nutrients. When one cooks vegetables in boiling water, especially for too long, they boil a lot of the nutrients out of them.
