My friend freezes her soon-to-be-too-ripe bananas and then uses them as an ingredient in fruit smoothies/protein shakes for herself and her kids. I haven't tried it (yet) myself, but she swears by it as a way to keep from wasting bananas.

I think they probably do get a little weird--not too weird to be blended into a shake, but too weird to eat, for sure.

Perhaps the most logical thing to do with them is to make (quite a lot) of banana cake and freeze it. Bananas themselves can't be frozen and nor would they last very long if you mashed them and made them into a filling.
Here is one recipe for Banana Cake: http://allrecipes.com/Recipe/A-Number-1-Banana-Cake/Detail.aspx

You can freeze them, and put them through a blender to make natural banana ice cream - this can then be kept in the freezer until you are eating. You could add some citrus juice to the mix to keep them from going brown.
Alternatively, if the bananas are still in good nick they are nice to have chopped up and topped with custard and cream.
