Hi becky, I was craving peanut butter fudge yesterday, so we must be on the same wavelength..
I also saw you are in NY and as much I wanted to make this fudge, I find regardless if I had a/c or checked the temp of this fudge, in the summer when the humidity is high, it never turns out..That is why I make a bunch in the cold weather months and freeze it..This recipe is very simple and quick and takes little ingredients.
1/2 cup milk
2 cups sugar
2 tablespoons karo syrup
1/2 stick butter (not margarine, real butter)
2/3 cup peanut butter
1 teaspoon vanilla
Boil the first 4 ingredients for only five minutes. Add the peanut butter and vanilla and whip until it starts to stick to the sides of the pan. Pour into a buttered 8x8 pan and place in fridge until cool. Cut into squares and enjoy..:)
