portable convection oven - what do you know about them?

Mum just gave me a searing convection oven and I am wondering if it is useful for me because I am a vegetarian. It looks very useful for people that cook roast chicken and vegetables. It will also cook cakes and pies a bit quicker than a normal big oven. Initially I thought I could use it to make soup or casseroles/curries in the oven pot as it says you can sear it on the stove top in the pot, then put it on the oven. But some parts say to wrap veggies in alfoil if you want to cook veggies with your meal. I don't like using alfoil, so I wonder if I can cook curries etc without alfoil?
